Description

Notes de dégustation

Naturellement forgé par la rigueur hivernale du Québec, ce cidre de glace présente de riches arômes de pomme confite, d’abricot, de marmelade, de noix, de sucre d’orge et d’épices douces. L’importante concentration des saveurs, de la fraîcheur et des sucres naturels de la pomme produisent un équilibre spectaculaire et de grande intensité. La texture très onctueuse de ce cidre supporte ses saveurs complexes jusque dans une longue et vibrante finale.

Service

Seul, au début ou à la fin d’un repas, ou accompagné de foie gras, terrines, fromages expressifs, desserts fruités ou chocolat noir. Ce cidre de glace est une alternative exquise et originale aux vins liquoreux traditionnels ou issus de vendanges tardives.

Ex. : Foie gras au torchon, rillettes de gibier aux figues, fromages bleus ou à pâtes fermes, tartelette jardinière, chocolat amer.

Servir entre 5 et 7 °C.

Bottle - Vintage 2007 - Spicy dusty apple. Dark caramel. Lots of dark red apple, cooked notes and some dusty and nice sweetness. Light acidity. Very complex and nice.

Corked bottle, as Réserve d’Éole, vintage 2007, 10 years old
Amber color. Nice complex aroma, not very deep, mild acidity. Bold body, very sweet without being syrupy, strong flavor of caramelized sugars, dominant acidity, and some astringency in the final to increase complexity.
Excellent.

Amber-brown. No head. Quite appley on the nose. On the palate, sweet with moderate sugars, and light tannins. There’s a decent acidity and juiciness, apple skins.

2007 vintage. 375mL bottle, pours a dark caramel brown. Aroma is on the earthier and spicier side for an ice cider, with earthy red apples, treacle toffee, caramel and brown sugar. Flavour is similar, with a spicier and earthier red apple character, moderate treacle and brown sugar. Not the deepest or most complex ice cider, but I like the earthier character upfront, which then transitions to treacle. Very good.

Bottle shared by someone at the post NotB tasting. Poured a clear yellowish gold with a white head that dissipated completely completely. Aroma had a combination of sweet apples with a bit of a backing tart green apple. Flavor was a nice combination of sweet apple in the start with a bit of a tart green apple finish.

A light golden ice cider with a sweet cooked apple aroma. In mouth, nice sweetness, barley candy (sucre d’orge), light acidity, warming alcoholé Excellent. Tasted at Mondial des Cidres de Glaces, Feb. 13, 2010.
