This beer began with Boris, our much-loved Bourbon-barrel-aged Russian Imperial Stout. We always knew it would stand up to "big coffee" and so we set about blending different varieties until we settled on a particular Colombian roast from our good friends at Timbertrain. We then used Boris to make a huge batch of cold brew and the result is Boris Arabica, a lovely marriage of richness and complexity highlighting the coffee within layers of chocolate, peat smoke, oak, vanilla, and dark malts.

COFFEE Colombian, Arabica
HOPS Magnum, Ekuanot, Centennial
MALT Pilsner malt, Roasted Barley, Peat Smoked Barley

Dark brown. Bubble head. The aroma is nice - chocolate, coffee, and vinous barrelly notes. On the palate, a fair bit of coffee, lots of chocolate. The acidity is just minimal, along with what might be some brett - it’s that faint. The red wine barrel is not much at all on the palate. Quite enjoyable - the coffee does add a unique element to this, helping balance it out, IMO.

750mL bottle, pours black with a small tan head. Aroma brings out lots of harsh espresso beans, deep roasted malt, and light vinous notes. Flavour is intense, with heavy roasted malt, espresso, and light burnt notes. Bone dry and harshly roasted. Not a beer of elegance, but it works well enough. Good stuff.
