We're laying down a funky beat. Four beats, to be precise. It's our Elements of Funk series, designed to showcase the similarities and differences between four strains of brettanomyces, which the cool kids call "brett". To accomplish this, we started with a base beer that took inspiration from Saison de Lente, using a fairly simple malt bill, noble hops and familiar house yeast to leave the path to funk as unobstructed as possible. Following the base beer's fermentation in stainless steel, we then sent one quarter of it to the brite tank at a time. Each quarter was inoculated and separately bottled with a different strain of brettanomyces: lambicus, drei, claussenii and brux. While all four variants appear similar to the naked eye (and should be chilled and opened with caution,) the nuances are many.
Elements of Funk: Brettanomyces Claussenii exhibits wild, fresh, citrus and floral aromatics with pithy and herbaceous elements joining the funky, expansive party on the palate. As the claussenii continues to develop in the bottle, so will the beer's character and the elements of funk.

Poured from a bottle. Aroma is fruity with nice pineapple and mango notes. Some light stone fruit character as well. Light citrus notes as well as light cracker malt notes. Some floral notes with a light herbal note. Pours a cloudy, golden orange with a very large, frothy, white head that slowly recedes. Moderately high lacing and faint legs. Flavor has a bit of sweetness with some light cracker and caramel notes. Medium light red apple and overripe pear notes. Lighter pineapple and mango notes with medium light floral notes. Medium light grassy, and herbal hop notes. Light spicy phenolic notes with moderate bitterness. Mouthfeel is medium bodied with high carbonation. Low, but present astringency and low alcohol warmth. Overall, I liked the aroma quite a bit, but the flavor doesn’t have the same fruit profile. Flavor has more red apple and pear with less tropical fruit. The phenolics aren’t too bad and the harshness in the Drie version isnt present.

A hazed golden ale with a thin creamy lacing off white head. In aroma, sweet fruity malt with light coriander, curacao, light Brett, citrus pulp, very nice. In mouth, a nice sweet fruity malt with light berries, Brett notes, light cork, very nice and smooth. On tap at brewery.
