We're laying down a funky beat. Four beats, to be precise. It's our Elements of Funk series, designed to showcase the similarities and differences between four strains of brettanomyces, which the cool kids call "brett". To accomplish this, we started with a base beer that took inspiration from Saison de Lente, using a fairly simple malt bill, noble hops and familiar house yeast to leave the path to funk as unobstructed as possible. Following the base beer's fermentation in stainless steel, we then sent one quarter of it to the brite tank at a time. Each quarter was inoculated and separately bottled with a different strain of brettanomyces: lambicus, drei, claussenii and brux. While all four variants appear similar to the naked eye (and should be chilled and opened with caution,) the nuances are many.
Elements of Funk: Brettanomyces Claussenii exhibits wild, fresh, citrus and floral aromatics with pithy and herbaceous elements joining the funky, expansive party on the palate. As the claussenii continues to develop in the bottle, so will the beer's character and the elements of funk.

750 ml bottle. First rating of October as well as beer #8181. Total gusher, but I've had this for a while, so that could be my fault. Funky and earthy. Lots of spice. Fairly dry. Grain and fruit notes comes through as well. Lot going on here, and I like how it's progressed with some time in the bottle despite turning into a gusher.

Bottle. Pours pours hazy golden orange, medium off white head, good lacing. Aroma is dusty, earthy, Brett, hint of citrus, peach. Flavor is dry, light bitter, light plus funk, earthy and dusty. Light body, soft mouthfeel and carbonation. A bit of lingering bitterness and astringency, but light overall. Interesting.

Gusher as usual, with a huge, fairly well-retained, white head atop a lightly hazy honey-tangerine-peach.
Smells tangy and full of lovely peach and tangerine. Just a hint of band aid, with over-ripe lime. Some alcohol asserts itself rather quickly. Cracker and biscuit behind it, but seemingly quite dry. Floral notes for sure, with light vanilla and some lactic and light vegetal notes. The brett itself is pretty nice, but I’m not in love with either the malt or floral/spice/vegetal character.
Wow, quite different in the mouth. Almost smokey at the start, as some brett strains can be, though it’s just intensely phenolic. Soft, vanilla-biscuit-cream maltiness and mostly tight carbonation provide a relaxing texture. Some spicy, tangy, lightly citric notes on the finish with more grain and biscuit. Not alcoholic in flavor and I gotta say, I like that texture a lot. The brett is spicy, woody, floral and herbacious as the commercial description notes. Pretty cool. I like the more band-aid and lime/hickory of the brux and the horsey cherry pie of lambicus, but this is interesting. I’m pretty thrilled to drink any Bruery beer that isn’t a 17% sugary monster.

Bottle. Lasting full head on a blonde liquid. Aroma is straw, wet grass, barnyard.
The flavor has a strong note of oak after the sitting down of the bottle. Large amount of earth and funk. The finish is an extreme amount of bitter grass. Lighter in body. Effervescent mouthfeel. Pretty decent but rides the line of astringent.

75CL Bottle. gushed a little bit. can’t remember if AFH or I bought this. hazy golden orange. Smells great. Just smells spicy with a ton of citrus. I love the aroma. it’s very bread-like, sourdough, lemons, crusty old oatmeal, dense. I like the mouthfeel. good density to it with a very weak and light finish with bits of peppercorn. Not a bad beer.

On tap at the Bruery. It pours a lightly hazed pale orange color with a creamy white head. The aroma is a bit fruitier than the drei with the typical pineapple notes you get from this strain. Some of the toasted grain comes through more as well. Hints of funky baby poop. The flavor is very nice. Lots of pineapple, a little toasted grain, and some soapy funk in the finish. No fecal. Creamy mouthfeel. Good stuff.
