The Quetsche Tilquin à l’ancienne is a spontaneous fermentation beer obtained from the fermentation of destoned fresh purple plums (Quetsche véritable d’Alsace, close to the Damson) in a blend of 1 and 2 years old lambics for a period of 4 months. Unfiltered and unpasteurized, it is re-fermented in the bottle for a minimum period of 3 months. The lambics used were fermented and matured in our own oak barrels at the blendery. They are made from worts brewed by Boon, Lindemans, Girardin and Cantillon.
The taste is slightly tart but also fruity and round which makes this Quetsche à l’ancienne may be more accessible for non-experts or less sophisticated palates. It also has a slight dryness from the skin of the plums. The nose perceives a plum brandy perfume.

37,5cl bottle, 3 years old. Cloudy orange/purple color, with almost no head. Aroma of farmyard, leather, typical gueze I would say. Taste is sharp, lemony, leather. Almost no fruit notes, 3 years are already too many for it. But it's still a nice gueuze, refreshing.

Rerate 01.05.2021: 0,375l bottle at home. Vintage 16/17, BB 31.01.2027. amber murky color, almost no head (seems like a still one). smells plums, stone fruits, peaches, subtle funk apricots, lovely smell. full body, no carbonation. tastes citric, grassy, stone fruits, lactic, funk, earthy. finishes quite dry and rather sour with notes of stone fruits, citrus and some lactic notes. quite nice one, loved the smell, taste is rather sour though (a bit over the top), this is still, but I dont mind, love the plum and stone fruit notes, overall lovely. 8, 4, 7, 3, 17

Bottle 37,5 cl. Vintage bottle - probably 6-7 years old. Pours a clear orange with only a slight brim of a white head. Complex sweet'n'tart aroma, noble rot and subtle Brett. Thin almost watery body with hardly any carbonaton, super dry, Brett and Acetobacter, tart bt not extremely so. Complex and very enjoyable - also after all these years. 250221

Bottle. A- Plums, tart, bright. A- Orange color, cloudy liquid, no head. T- Tart, sweetarts, oak. P- Light body, average texture, flat carbonation, balanced finish. O- Very refreshing and tasty. A little funk and fairly tart. At 5 years old this was pretty good stuff. Would like more carbonation, and more plum but still nothing to bemoan.

Bottle. Nice reddish orange color. The quetsches are not super strong but give a nice extra kick to the lambic. Over medium sour. I think this is as good as it gets for this beer, beter than aged bottles I tried before.

37,5cl bottle (2017-2018) from Rob the Gourmets’ Market in Brussels. F: no real, some bubbles. C: murky amber, milky hazy. A: very fruity, peach, plums, funky, bit lemon. T: medium body, sour fruity, funky, green plums, woody, bit lactic touch, lemon, soft carbonation, very nice, refreshing, fully enjoyed.

Happy holidays to me! Orange-brown color, fairly hazy. Sour, tart, fruity, pungent. A bit of acidity, some fruity sweetness. Plums, funk and hints of citrus. Very nice.
