The Quetsche Tilquin à l’ancienne is a spontaneous fermentation beer obtained from the fermentation of destoned fresh purple plums (Quetsche véritable d’Alsace, close to the Damson) in a blend of 1 and 2 years old lambics for a period of 4 months. Unfiltered and unpasteurized, it is re-fermented in the bottle for a minimum period of 3 months. The lambics used were fermented and matured in our own oak barrels at the blendery. They are made from worts brewed by Boon, Lindemans, Girardin and Cantillon.
The taste is slightly tart but also fruity and round which makes this Quetsche à l’ancienne may be more accessible for non-experts or less sophisticated palates. It also has a slight dryness from the skin of the plums. The nose perceives a plum brandy perfume.

Bottle at Dean’s Pale Lager tasting, Den Haag. Poured a cloudy medium amber with a round white head. The aroma is big acid citrus. The flavour is strong sour. Medium bodied with low carbonation. A super smooth acid citrus palate.

Bottle, 75cl corked, at Christianssand Brygghus. A finger thick off-white head leaving some lacings. The aroma is quite barnyard-ish, with orange, lemon-peel and some faint peppery notes. It’s pretty dry on the palate, with a wonderful carbonation level and pretty full-bodied. Lots of flavor too, not much plums to be detected, but there’s some. Lasting finish. Wonderful indeed. 131029

[10/7/13] Bottle at Chez Moeder Lambic Fontainas in Brussels. 2013 bottle. Murky orangey red with some floaties and a big white head, slightly pinkish. Lovely barnyard aroma with lots of fruitiness. Delicious sour flavor, funky, very fruity, with some oak, lactic notes and a light, delicate, lemony note. Rounded mouthfeel. Really great. 8/494/17=4.2

Bottle at home. In the glass it has a very cloudy bronze-orange color, and the beer does not have much foam, but only slightly off-white-colored in the edges. Aroma beats upon me with plenty of acidic fruit which is reminiscent of apples, which makes me think of apple cider vinegar. In addition, there is a good dose of another sour berries and touches of barnyard and forest floor at the end. A proper fruit lambic! The taste is also expected sour first and then come hordes of tart and sweet fruit. Mouth feel is comfortable and is silky and smooth. In the end feels also a great berry bitterness. The taste is round, fresh and fruity. Very well-balanced as well. A fruit lambic of high class.

Small offwhite head. Hazy amber body with strong carbonation and a few visible floaties. Earthy funky barnyard aroma with wooden waxy notes. Acidic earthy funky barnyard taste with dirty cow dung notes. Mid-bodied. Sharp, almost burning mouthfeel. Dry-acidic earthy wooden waxy aftertaste with lemony barnyard notes. It’s a mixed experience for me: some of the flavours are just too dirty for me to enjoy, but in other ways it’s an elegant and refined beer. Hence the rather mixed scores. (0.375l bottle, from wine monopoly, Vika, Oslo.)

Bottle, 2nd batch. Nose of plum, grapefruit, funk, horse blanket, very fresh and nice. Dry, fruity flavor, good acidity level, crisp and tart but not ridiculously sour. Dry, lemony finish with some underlying sweet plums. Great.
