The Quetsche Tilquin à l’ancienne is a spontaneous fermentation beer obtained from the fermentation of destoned fresh purple plums (Quetsche véritable d’Alsace, close to the Damson) in a blend of 1 and 2 years old lambics for a period of 4 months. Unfiltered and unpasteurized, it is re-fermented in the bottle for a minimum period of 3 months. The lambics used were fermented and matured in our own oak barrels at the blendery. They are made from worts brewed by Boon, Lindemans, Girardin and Cantillon.
The taste is slightly tart but also fruity and round which makes this Quetsche à l’ancienne may be more accessible for non-experts or less sophisticated palates. It also has a slight dryness from the skin of the plums. The nose perceives a plum brandy perfume.

Hazy amber brown color. Barnyard, plums, cobwebs in nose. The mouth is intensely sour, with lots of plums, cobwebs, very intensely sour. Love the intensity. Lingering plum sourness that just goes on forever. Very interesting stuff.

Bottled, BB 29/01/2023, so 2013 batch, large sample. Hazy amber color, short lasting off-white head. Aroma has typical gueuze features, barnyard, tartness, etc. Some soft plums are present, but I wouldn’t have guessed that without knowing. It does give the lambic that little bit of extra and the wonderful balance does the rest. In flavor there is a bit more of fruit present, besides the sourness. Again, superb balance between citric and lactic notes. Wow, truly great stuff.

Sampled at Kristiansand Ølfestival. Cloudy pinkish orange body with a moderate sized white head. Strong acidic and funky aroma, fruity but difficult to pick out anything special. Flavor is pretty sour and acidic with the same fruitiness as found in aroma, fine body with a tart and acidic aftertaste. A bit unfear to rate this delicate lambic at a festival with one glass in each hand. Will definitively re-rate later, but still had a fine experience with this beer.

Refrigerated 37.5 cl green bottle corked and capped poured into a tulip. Pours tranlucent orange with small white head. Aroma is tart, medium body, medium carbonation, and thin small bubble lacing. Taste is tart and some plums. Better as it warms, but expected more flavor.

2013 bottle. Hazy rose gold with an off white head that quickly fades to a coat. Wheaty lemon aroma with plums, rhubarb and a strange but not unpleasant note of (um) graphite. Carbonation is quite low, just slippery texture. Really juicy plums of the yellow-fleshed sort that go from sour rocks to rankly sweet mush in half a day unless you catch them at the right time. They’re lovely and they dominate, with wheaty tartness supporting and cleaning up the palate. Some almonds and apricots. Very good, but a bit well-mannered - this is all very smooth, and maybe wants for a little unhinged ramshackle intensity. Or maybe drunk just a little soon.

Bottle - 375ml, 2013 vintage. Pours cloudy pink amber with a small beige creamy head that slowly dissipates with good lacing. Tons of fairly large floaties, or more correctly sinkies since they mostly settle out after a few minutes. Aroma is funk, lemon, fruity (I assume plums), yeast. Flavor is the same, lightly funky, medium tart and fairly fruity overall, but in a nondescript way. Medium body, good champagnelike carbonation. A good lambic.
