The Billy Bishop is a double IPA that focuses on aromatic hops. With its deep gold colour, the high bitterness of this beer pairs perfectly with the fruity and exotic taste of the hops that were used. The massive dry hopping makes this beer highly aromatic, fruity, and exotic.

Un nez qui se situe dans les fruits tropicaux avec des accents de pamplemousse, de mangue, de tangerine. Houblonnage complexe avec des notes de résine de sapin, de gazon, des herbes aromatiques. On ne perçoit pas le Nelson Sauvin cependant. Le visuel est orangé, presque cuivré avec une mousse épaisse, dense et persistante. L’entrée en bouche se fait avec un léger caramel sur une base de fruits tropicaux. L’amertume est longue, résineuse, astringente. On perd beaucoup les fruits tropicaux en bouche. C’est malheureux car ça nuit à la complexité. Tout se passe dans le houblonnage, qui est bien élaboré et bien balancé, mettant en valeur les saveurs d’herbes et de résine. L’amertume est persistante pendant de longues minutes. Une bonne double IPA mais serait encore meilleure avec une plus grande place aux fruits tropicaux.

Hazy light amber color with medium sized compact head. Aroma and flavor are loaded with piney hops, and the pale malt is delicate, perfect backdrop.
Fresh, excellent.

Bottle - Sweet caramel and pine. Cloudy gold with a decent white head. Sweet woody notes and a caramel piny finish. Nice.

500mL bottle, pours a cloudy orangey amber with a large white head. Aroma brings out lots of resinous hops, lots of pine, and balanced by a big caramel malt backing. Flavour brings out a shit ton of piney hops upfront, a little resin, and just enough biscuit malt to back. A big astringency on the finish, but it's very fitting. Exactly my kind of double IPA. Excellent.

En fût au brouepub. Couleur jaune-orangée voilée, mousse blanche persistante. Arôme de houblon résineux, fruits tropicaux, agrumes. Goût de houblon résineux, amertume toute en longueur, herbal en fin de bouche, pamplemousse en arrière-goût. Carbonatation moyenne, corps moyen-dense.

Draft: Poured a medium yellow color ale with a medium size foamy head. Aroma of piney and citrus hops is quite nice with some flora undertones. Taste is dominated by medium bitterness notes with some citrus and piney notes with some flora notes and non-descript malt backbone. Body is about average with good carbonation. Noting to write home about but still very solid effort.

A lightly hazed golden DIPA with a thick frothy off white head. In aroma, fragrant floral hops with a biscuit malt, doughy character, nice. In mouth a good biscuit fruity malt with doughy character, floral and resinous hops, alcohol warmth, nice. On tap at Festibière de Gatineau 2014.
