Mont Des Cats is a trappist abbey in Northern France, a few kilometres from the Belgian border. They do not have a brewery in their monastery, so their beer cannot show the Authentic Trappist Product logo. But it doesn’t get much closer – they have their beer brewed by the monks of Chimay!

Developed independently to the Chimay range, the beer is a lovely copper colour. The link to Chimay is evident in the distinctive Chimay yeast character, in both the aroma and taste.

A pleasant caramel malt sweetness introduces the beer, being joined by hints of dried fruits, gentle spices and an earthy, herbal hop character. As the beer progresses, the bitterness seems to build toward a nice lingering finish.

The abbey only makes one beer, with no intention for more. The abbey is recognised as a Trappist Monastery, allowing them to use the term on the labeling. But as the beer is not brewed on their own premises, the beer is not a Trappist ale.

Old rating from 21-11-15 - A 750ml bottle brought back from Cassel in Northern France. Pours a cloudy brown colour with a beige head that lingers. Aromas of caramel, spice & malt. Tastes of caramel, spice, apple & malt with quite a alcoholic aftertaste. Overall a decent beer without standing out from the crowd.

A claasical Belgian ale signed by chimay. This one is malty, smooth, sweet, notes of toffee, little alcoolic and warm, not complex, good. 20.03.2020, it was the beginning of the covid, drinking it at night at Epalinges.

Pours a murky copper colour with a foamy head. Aroma of yeast, malts, plum, slight caramel. Sugary flavour. Like the Chimay beers, pretty high carbonation. This is a nice enough brew, but I expected more.

Bottiglia. Il gusto al naso è indirizzato verso speziato e vegetazione. L'olfatto viene stimolato in maniera sufficiente. Il cappello di schiuma resiste abbastanza. La grandezza delle bollicine è medio-fine. Il liquido è di aspetto velato. Il colore è ambrato. Il corpo è rotondo. L'amaro è contenuto. La forza gustativa è molto elevata e si prolunga in modo sufficiente. Le sensazioni boccali finali risultano di pronta beva. Il retrogusto è di decente intensità. Al gusto vengono donati toni di miele, frutta secca, agrumi, arancia, erbe aromatiche, frutta passita, caldo e alcol presente.

Аромат конечно пшеничный, много солода чуть сладкого, намеки на мед и легкую карамель, возможно темные фрукты. Цвет как у золотого эля. Пенка шикарная. Вкус тоже на уровне. Достаточно просто но хорошо, есть снова пшеница, сам солод, немного трав, есть уже темные фрукты. Вкус уже больше темный эль напоминает. При глотке снова темные фрукты и алкоголь, даже слишком много алкоголя если честно. Пшеницы и глубины вкуса уже меньше. В целом понарвилось, но есть лучше в стиле.

Bottle 0,75tr: Hazy dark brown coloured "8th Trappist" with an smooth slightly sweet bitter taste. Some hints of caramel and raisin, just wait for the real brew thats will be brewed in France.
