Mont Des Cats is a trappist abbey in Northern France, a few kilometres from the Belgian border. They do not have a brewery in their monastery, so their beer cannot show the Authentic Trappist Product logo. But it doesn’t get much closer – they have their beer brewed by the monks of Chimay!
Developed independently to the Chimay range, the beer is a lovely copper colour. The link to Chimay is evident in the distinctive Chimay yeast character, in both the aroma and taste.
A pleasant caramel malt sweetness introduces the beer, being joined by hints of dried fruits, gentle spices and an earthy, herbal hop character. As the beer progresses, the bitterness seems to build toward a nice lingering finish.
The abbey only makes one beer, with no intention for more. The abbey is recognised as a Trappist Monastery, allowing them to use the term on the labeling. But as the beer is not brewed on their own premises, the beer is not a Trappist ale.

Thuis uit een flesje. Donkere amber kleur. De smaak vind ik wat tegenvallend voor een triple van 8%. Beetje vlak.

bottiglia 33 cl, schiuma bianco sporco fine persistente, color ambrato carico velato, al naso lieviti belgi spezie zucchero di canna uvetta sotto spirito vino porto, in bocca è speziata caramello uvetta, carbonazione moderata, corpo rotondo, watery, lieve astringente, amaro deciso, secca nel finale. Non è male ma manca un po’ di struttura. 26.01.19

Flesje gekregen van B. en gedronken met J. Roodbruin bier met stevig schuim. Aroma is fruitig en koffieachtig. Smaak is hoppig en fruitig. Nasmaak is iets bitter.

Flaska från Hopt, några få månader kvar till bf-datum. Mörk, lite smutsig mahognyfärgad med fluffigt smutsvitt skum som lämnar rester längs glasets kanter. En del fällning flyter runt. Fruktig, söt och maltig i doft och smak med inslag av torkade plommon och aprikos, övermogna och kanderade äpplen, en lätt parfymig ton, kandisocker, spannmål, lätt torra och rostade toner med en tydlig jästig ton i utandningen. Något kryddig med lite drag av pomerans och lakritsrot med en snäll beska i avslutningen. En gnutta oxiderad. Mellanstor kropp. Inte alls i samma storlek som exempelvis Chimay blå, känns mer som en mellanstor belgisk brune.

Fles thuis geprobeerd met LiekevdV. Het heeft een oranjeachtige kleur. De geur is moutig en wat fruitig. De smaak is moutig, fruitig en wat kruidig.

Sample during the "Micah's Downstairs Reopening" tasting on 03/02/2018. The beer is a clear amber color with a medium thick off-white head that recedes gradually to an outer ring. Partial rings of lace. Dark fruit, yeast and malt aroma. Medium body with flavors of caramel malt, dark fruit and earthy yeast. The finish is malty with a fruity yeast aftertaste.

75cl bottle. Pours hazy amber/red with a big, frothy, lasting, off-white head. The aroma contains apple, banana, yeast (unmistakably the same as in the Chimay beers), spices, caramel, sugar, hops, prunes & raisins. It tastes light to medium sugary or caramel-like sweet and medium spicy bitter; yeasty, not too dry finish. Medium to full body, slick texture, fizzy carbonation. Nothing unusual, but pleasantly surprised by this one!
