2014 - A mash bill of 65% Pilsner and 35% Unmalted Wheat that was turbid-mashed and boiled for three hours with hop pellets. Inoculated with Barrel #40 and fermented in and aged in two neutral Hungarian Oak 500L Puncheons.
2015 - A mash bill of 65% Pilsner and 35% Unmalted Wheat that was step-mashed and boiled for two hours with aged, whole-leaf hops. Inoculated with cultures from the 2014 brew and fermented in and aged in two French Oak 500L Puncheons.
2016 - A mash bill of 70% Pilsner, 20% Unmalted Wheat and 10% Malted Wheat was single-infusion mashed and boiled for two hours with hop pellets. Inoculated with cultures from the 2015 brew and fermented in and aged in two French Oak Pinot Noir 500L Puncheons.

Bottle during Tasting; hazy yellow pour with a thin white head, aroma has some straw, taste has citrus, big sour, really good stuff.

Bottle shared at Mikkeller Vik, Copenhagen - golden pour with almost no head. Tart sour fruity with some light citrus accents, notes of lemon, some white grape, horseblanket, light funky notes, tart fruity finish. Lovely.

Bottle - Nice funk and light petrol. Clearish gold with a decent white head. Light soured lemon, creamy and a touch of sourness. Well balanced and nice.

375ml bottle at Kump's during non-Belgian lambics tasting. Pours a hazy golden with a weak white head. Aroma is earthy, horse blanket, very gueuzy. Similar taste. Very dry. Quite good.

375mL bottle, pours a clear golden blonde with a small white head. Aroma brings out lots of wild funky critters and some oak. Flavour reveals a lot of wild yeast complexity, dry oak, and light acidity. Light acetic character. Very wild and oaky. Excellent.

Bottle thanks to Kurt! Pours clear golden, small white head, dissipates quickly, some lacing. Aroma is huge on lemons, mineral water, oak, funk. Flavor is medium tart, huge lemon again, light bretty funk. Medium body. Not at all what I was expecting out of this brewery or this beer. No nuance whatsoever. Based on reviews I am gonna hafta assume I got a bum bottle.

375 ml bottle shared. Hazy yellow with off-white head. Aromas of stone fruit, orange, tropical fruit, funk. Tastes of stone fruit, tart notes, light funk. Light body with a dry finish. Great.

Thanks James for sharing the bottle! Poured into a snifter showing moderately filtered white lacing with golden yellow hues. The nose is bretty with notes of horseblanket. The palate is medium bodied and moderately carbonated. Moderately tart and lightly acetics with light flavors of lime and apricot.

Bottle thanks to Zach. Pours a hazy gold with small white head that diminishes to nothing. The aroma is funk, lemon, oak. Medium body, funky, apple skin, oak, tart, light dry finish, very nice.
