The base beer for Apricot Stonington was brewed with 100% Valley Malt and fermented by our native New England mixed culture which was collected from grape skins at Saltwater Farm Vineyard in Stonington, CT where JC & Esther Tetreault were married. This New England Saison is aged in French oak Chardonnay casks for sixteen months to layer in a bright vinous character before being blended back into stainless to carry out a secondary fermentation on apricots for three months.
Pouring a lightly hazy orange yellow, Apricot Stonington has a stone fruit intensive nose with undertones of white grape, light toasted oak, and a mild earthy funk. Bold profiles of apricot nectar and overripe yellow peach are balanced against a crisp, biscuity malt backbone and a touch of oak spice on the palate. Finishes semisweet with a pleasant acidity and light mouthfeel.

Draft. Amber beer with a cream head. Tart aroma with apricot and brett. Brett and apricot flavor with light tartness and light earthiness. Medium bodied. Apricot and brett linger with light tartness and light mineral notes.

On tap at Ratebeer Best 2016. It pours a lightly hazed orange color with a white head. The aroma is a bit funky and tart with noticeable fresh apricot. The flavor is a bit more complex with apricot, hints of funk and spice. Good low to medium levels of lactic tartness. I’m getting a little more of the Saison yeast complexities than I normally get in these sour, fruited Saison hybrids and I like it.

Sample at RateBeer best 2015. Pours cloudy orange, small white head, some lacing. Aroma is oaky, stonefruit, apricot, basement, brett, dust. Flavor is medium tart, light plus funky, fairly strong mineral water note. Medium body. I found this to be a bit light on apricot presence - certainly there, but not really in your face, which perhaps is a good thing.

Thanks FlopFaceFred. Aroma is slightly malty with some light acidity. Moderate apricot notes with a nice saison ester character. Light phenolics. Pours a hazy, golden orange with a medium sized, thick white head that recedes quickly to the edges where it lingers. Moderate lacing and small legs. Flavor is fairly acidic with some medium light citrus notes. Moderate apricot notes with some light fruit esters. Hints of phenolics and light malt notes. Medium low bitterness. Mouthfeel is medium bodied with medium carbonation. Low astringency and low alcohol warmth. Overall, a nice apricot forward beer, but too sour to really be a saison. Nice apricot notes though.
