The base beer for Apricot Stonington was brewed with 100% Valley Malt and fermented by our native New England mixed culture which was collected from grape skins at Saltwater Farm Vineyard in Stonington, CT where JC & Esther Tetreault were married. This New England Saison is aged in French oak Chardonnay casks for sixteen months to layer in a bright vinous character before being blended back into stainless to carry out a secondary fermentation on apricots for three months.
Pouring a lightly hazy orange yellow, Apricot Stonington has a stone fruit intensive nose with undertones of white grape, light toasted oak, and a mild earthy funk. Bold profiles of apricot nectar and overripe yellow peach are balanced against a crisp, biscuity malt backbone and a touch of oak spice on the palate. Finishes semisweet with a pleasant acidity and light mouthfeel.

Bottled 28/june/18. Slightly cloudy light copper, some floaters, white edge. Smell is sour, apricot, sweetness, wood. Fairly high carbed, decent body. Taste is sour, bit of a pucker, medium sweet. Plenty of apricot, juicy and ripe. Just a tad too sour.

Bottle. CW online. Fridge clear out job. Slightly gloppy pour. Loads of lumps in this deep orange. Fine white head. Nose has acetic acid. Some lemon. Apricot, at a push. Taste is tart and acidic. Gloopy on the palate. Brisk carbonation. Sour dry finish. Pointless, tbh.

Bottle. (thanks SirLimpsalot) Hazy yellow with a small white head. Fresh and nicely tart with apricot, oak, lemon, some yeast and grapes. A tasty one.

Pours unclear, peachy amberblonde. Small to no white head. Smell is tart, apricot. taste is intense, sour, full apricot. Harsh sour backbone. Great fruit, but not a very balanced base.

Bottle purchased from Canton location: pours slightly misty orange with a small head. Aroma is a nice bit of apricot. A bit of vinegar and funk. Taste is quite sour and a bit acidic. Nice fruity flavor. Plenty of sweetness. A bit spicy. Good.

750 ml. bottle sampled @ Trillium tasting. Orange with no head. Nose is vinegar vomit, apricot, mineral & stomach acid. Taste is apricot, vinegar, smooch acid, vomit, very sour & big vinegar apricot. Body is same stomach acid & stone fruit, decent even if excessive in its profile & quite simple.

11.2 oz. bottle, pours a cloudy golden with a small white head. Aroma brings out fresh apricots upfront, with oak and light wild yeast. Flavour is super fruity, with fresh apricots, moderate tartness and assertive acidity. Fruity and deep. Delicious.
