An experiment in co-fermentation — our Bruers let this blend age in Copper & Kings apple brandy barrels for over a year. With no added adjuncts post-aging, this is purely wort, fruit, and wood.

On tap. Pours a murky red hue with a small white head. A huge vinous brandy nose, some heat. Rich, slick, big sweet apples, huge brandy barrel. Very fun.

Bottle at home. Pours deep amber, nose is caramel, marzipan, toffee, apple, oak, brandy, taste is similar, sweet, chewy, definitely some heat from the high abv.

750 ml bottle from 2019 RS. Thanks Adam. Wow, the smell is like a mix of apple slices, apple brandy, and mild caramel. The flavor is like a sweet ice cider. Apples, toffee, and brandy. Wow! That is a dessert!

750 ml bottle into snifter, bottled on 2/22/2019. Pours slightly hazy deep golden amber/light orange color with a 1-2 finger fairly dense and fluffy of white head with solid retention, that reduces to a minimal spotty lace cap that lingers. Light spotty lacing clings on the glass, with a fair amount of streaming carbonation. Aromas of big lightly tart/tangy red apples, fruit peel, pear, apricot, honey, caramel, brown sugar, apple brandy, oak, wheat, and white bread; with lighter notes of oaken vanilla, cinnamon, herbal, grass, pepper, and yeast earthiness. Minimal booziness in the aromas as it warms. Damn nice aromas with great balance and complexity of mcintosh apples, apple brandy barrels, dark/bready malts, and light-moderate fruity yeast notes; with big strength. Taste of huge lightly tart/tangy red apples, fruit peel, pear, apricot, honey, caramel, brown sugar, apple brandy, oak, wheat, and white bread; with lighter notes of oaken vanilla, cinnamon, herbal, grass, pepper, and yeast earthiness. Light herbal, grassy bitterness; apple/brandy tang/tartness; and oak tannin spiciness on the finish. Lingering notes of tart/tangy red apples, fruit peel, pear, apricot, honey, caramel, brown sugar, apple brandy, oak, wheat, white bread, oaken vanilla, cinnamon, herbal, grass, pepper, and yeast earthiness on the finish for a while. Awesome complexity, robustness, and balance of mcintosh apples, apple brandy barrels, dark/bready malts, and light-moderate fruity yeast flavors; with a nice malt/bitter/spiciness and tart/tangy fruit/brandy balance; with no cloying sweetness after the finish. Lightly increasing dryness from lingering bitter/spiciness and tart/tangy fruit/brandy. Light-medium carbonation and very full body; with a very smooth, creamy/silky/slick/bready, and lightly syrupy/sticky/acidic/tangy/tannic mouthfeel that is great. Mild increasing warmth of 15.6%, with minimal lingering barrel booze after the finish. Overall this is an awesome fruited barrel aged wheatwine. All around awesome complexity, robustness, and balance of mcintosh apples, apple brandy barrels, dark/bready malts, and light-moderate fruity yeast flavors; very smooth and dangerously easy to sip on for the huge ABV, with the mellowly tart/tangy/drying finish. I was hoping for a bit more yeast complexity, but you get what was promised: an awesome balance of fruit, apple brandy barrels, and rich malts. Not overly sweet/heavy from lingering dryness. A very enjoyable offering, and well made style example as expected.
