The third iteration of the first barrel aged beer we ever made, this wild ale was aged with multiple strains of Brettanomyces and bacteria for a year in French oak, with Niagara Shiro plums thrown into the mix. We love how this beer has developed over time, and couldn’t be more proud to share the newest version, tweaked to include light acidity and a lower, more drinkable ABV. This 2016 version is all about clean brett aromatics, juicy stone fruit flavours, and a subtle but decidedly spicy oak character. The body is dry and lightly acidic, with notes of under ripe pear, apricot, and plum.

Bottle at the brewpub. Hazy yellow pour, with a big white, frothy head. Aroma is very tart, lots of sour yellow plum, peaches, apricots, and grest funky barnyard, wet hay. Lively mouth feel and carb. Low bitterness, strong, lingering sourness with more tart fruit, really nice beer.

Panda at home, thanks to Fergus, 12/12/21. Hazed orange with a good sized just off white head that dissipates to a swirl. Nose is lemon rind, dusty hay, funk, green berry must, damp alleyway, barnyard esters. Taste comprises sharp citric zest, lemon rind, herb, apple core, funk, light brett, green berry sherbets, raw pineapple. Medium bodied, fine carbonation, semi drying close with balanced acidity and a good puckering kiss. Decent.

bottle. hazy yellow, small white head. complex bretty aroma, quite sour and acidic, also quite dry, can't seem to get any plums though. Perhaps sour plums. Flavor is extremely sour but also with a strong fruity plum note. ending with notes of wood and alcohol and leather. Intersting mix between super sour beer and the sweet plums, i don't find them totally coming together as a whole though, and the alc'ish bitterness is also a bit meh.. so overall 15 although with quite small twists to my flavor experience it could have gotten several points more

Bottle: pours orange with a white head. Aroma is plums, earthiness, funk. Taste is somewhat sour, plum notes, earthiness. Nice aftertaste. Good.

Bottle shared at the Spring DC tasting. Poured a hazy golden color with a small, slightly wispy head. Aroma was big plums. Very tart. Light sweetness, acid. Really nice stuff. Grape.

50cl bottle pours a hazy gold, lime green flecks and some cloudy white head. Nose has lime and lemon and white stone fruits, neutral barrel. Flavor is tart, fruity, stone fruit, lime. Finishes tart and oily.
