Mills’ first spontaneously fermented beer. The wort was produced using the traditional turbid mash method, with a grist of malted barley, raw wheat and rye. It was left in the coolship overnight to be inocculated with wild yeast and bacteria before being transferred to wood.

17th Sep 2018; monthly beer share in Chez Sophie, Shrewsbury, usual five suspects in attendance. Cork and caged 750ml bottle ;BB Apr 2020, bottled Apr 2018. Acidic and sour cider/cooking apple like in aroma and taste. Not really my thing; scored objectively.

75cl bottle @ monthly tasting, Chez Sophie Sep '18. Pours misty gold, small white head. Crisp, complex funk on the nose. Taste is complex, wild, prickly with a strong acidity, nice fruity citrus notes emerging. Excellent naturally made wild English lambic. And yes, I have no problem calling it lambic.

Bottle at home In Meldrum. It pours hazy orangey gold with a thick, foamy white head. The aroma is oily, juicy, sweet - sour, rich funky character, barnyard, brett, wood, white grape, and dried orange. The taste is dry, bright, tart, big ol kick of acidity, zingy lemon - lime, sherbet, grapefruit, orange peel, musty, white grape, sour candy, lactic aspect, minerality and oak. Medium body and fairly high, effervescent carbonation. Really interesting stuff. Loving the funky aroma. The acidity is a touch bracing though... Enjoyable nonetheless.

Draft @ BXL Beer Fest. Hazy orange colour, white foam. Rather lemony and tart sour ale, notes of vinegar, some citrussy notes.

Sample @ BXL BeerFest 2018, shared with Belgian RB crew, thanks.

Sampled @ BXL Beerfest 2018. A slightly hazy orange golden beer with a mid-sized most good lasting off-white head. Aroma of tart, mild soft reddish fruits, lime. Taste of tart pale fruits, citrus, lime, herbs, interesting.

Pretty clear orange beer, no head. Aroma: funky, bit fruity, brett notes, smells like actual lambic. MF: lively carbon, medium body. Taste: bit acidic, lemony, funky, pretty damn clean, good stuff! Aftertaste: soft bitterness, grapefruit peel, bit of tannins, woody touch.
