Mills’ first spontaneously fermented beer. The wort was produced using the traditional turbid mash method, with a grist of malted barley, raw wheat and rye. It was left in the coolship overnight to be inocculated with wild yeast and bacteria before being transferred to wood.

Cotts 2019. Dank and full on aroma. Hazy gold. Creamy white head. Medium-heavy sour. Light. Thin. Lifted by super fizzy carbonation. Long astringent finish. Easy drinking and not overdone.

750ml bottle, EFP bottleshare at Brewdog, Bristol. Pours hazed milky gold with a medium white head. Aroma: farmhouse funk, light to moderate acidic, white wine vinegar, white grape & cooking apple vibe. Taste: dry, vibrant, moderately acidic, lemon, lime, white grape, herbal, wood, some minerality. Medium body, spritzy carb, tart drying close. Already good and will improve with age I reckon

Bottle. Beer Stop, Dronfield. Hazed, pale to medium gold. Dense white foam, that lasts the course. Nose has bracing, juicy and fruity funk. Sherbet lemon. Hint of new leather and cut wood. Hint of spice, too. Maybe green peppercorn. Taste is tart and juicy as you like. Pretty refined as it stands, with more to come me. Tart and juicy on the palate. Light, foamy carbonation. Tart, slightly drying finish. Lovely.
