For the second Rye-on-Rye release, we drew inspiration from the famous New Orleans cocktail, the Sazerac. The official recipe is composed of rye whiskey, absinthe or Herbsaint, a sugar cube and bitters all garnished with a lemon peel. To translate this classic cocktail into a beer, we brewed batches of the base rye beer that received spice additions mimicking bitters as well as lemon peel during the boil. The resulting wort was fermented with our house Scottish ale yeast before being aged in freshly emptied Templeton Rye barrels.
Opening with strong aromas of rye whiskey, toasted oak, vanilla bean and cinnamon, Rye-on-Rye X – Sazerac is full bodied and spicy. Rye malt and whiskey character lead in the flavor giving way to hints of black pepper, anise and subtle citrus from the lemon peel all closing with a sweet, warming finish. Rye-on-Rye X – Sazerac is 11.8 ABV and 29 IBUs.

Pours hazy dark mahogany into a snifter. Mocha head with medium retention recedes leaving trailing sheets. Sweet rye and tonic aromas. Medium bodied with dark alcohol-soaked pit fruit and bitter lemon upfront turning to hot earth in the lasting finish.

750 ml corked and caged bottle purchased at the Boulevard Brewing Tours & Recreation Center in Kansas City, Missouri. L061716-2. The pour is a hazed toffee caramel brown with a fizzy one inch light tan head that falls slow and loud. The aroma is a strong boozy rye whiskey, wood barrel and a general potpourri spice. The taste is sweet and thick, big caramel toffee malt right away, fast followed by the rye whiskey, notes of tannic wood barrel, lemon peel and finishing with warming alcohol and additional rye notes. A lot going on, but quite smooth especially as the beer warms. The palate is heavy bodied with soft natural carbonation and the warming lemon peel booze rye finish. Despite bright boozy nose, the high alcohol level of this beer is decently integrated into the flavor. Solid sipper, well executed, lovers of strong sweet beer will go crazy for this one.

750 ml bottle into snifter, bottled on 6/10/2016. Pours lightly hazy/cloudy deep ruby red/copper color with a 1-2 finger fairly dense and fluffy light khaki head with good retention, that reduces to a small cap that lingers. Nice spotty soapy lacing clings around the glass, with a moderate amount of streaming carbonation retaining the cap. Aromas of big caramel, brown sugar, toffee, raisin, plum, fig, apricot, apple, lemon peel, anise, cardamom, cinnamon, brown bread, nuttiness, spicy rye, whiskey, toasted oak, vanilla, herbal, and yeast/toasted earthiness. Damn nice aromas with great complexity and balance of dark/bready malt, spices, whiskey barrel, and fruity yeast notes; with great strength. Taste of big caramel, brown sugar, toffee, raisin, plum, fig, apricot, apple, lemon peel, anise, cardamom, cinnamon, brown bread, nuttiness, spicy rye, whiskey, toasted oak, vanilla, herbal, and yeast/toasted earthiness. Light-moderate herbal bitterness and rye/whiskey barrel spiciness on the finish; with lingering notes of caramel, brown sugar, toffee, dark fruit, apricot, apple, brown bread, nuttiness, anise, cinnamon, spicy rye, whiskey, toasted oak, vanilla, herbal, and yeast/toasted earthiness on the finish for a while. Fantastic complexity, robustness, and balance of dark/bready malt, spices, whiskey barrel, and fruity yeast flavors; with a great malt/bitter/spiciness balance, and zero cloying flavors after the finish. Touch of dryness from bitter/spiciness as well. Light-medium carbonation and fairly full body; with smooth, moderately creamy, and lightly slick/sticky balanced mouthfeel that is nice. Alcohol is fairly well hidden with only a small warmth lingering after the finish; with minimal booziness. Overall this is an outstanding barrel aged spiced rye strong ale. All around awesome complexity, robustness, and balance of dark/bready malt, spices, whiskey barrel, and fruity yeast flavors; very smooth and easy to sip on for the huge ABV. A highly enjoyable offering.

750 ml bottle thanks to Willrunforbeer on this. He actually made the whiskey cocktail next to the brew. Deep mahogany color in a chalice. Mild whisky underneath a large amount deep malt tones.
Flavor is molasses, rye, weak oak and a dark bread note. Almost like pumpernickel (not exactly similar to a Christmas bread but close) the whiskey is here but not overwhelming. However, it doesn’t warm the belly after about 5 ounces. Medium in body that leans on full. Carbonation is smooth and gives a decent mouthfeel.
This is not really the same as the correct recipe for the official cocktail. (However, there are multiple resides for the cocktail) so comparing apples to oranges. That said, it is a pretty nice brew.
