Stout brewed with cacao nibs, cayenne pepper and orange

Bim Bam Boom is a rich dark stout brewed with cacao nibs, cayenne pepper, and orange. Initial flavors are of sweet citrus followed by a lively tingling of peppery spice. A finish complete with roasted cocoa and tart orange flavors leaves a lasting impression

12oz bottle. Drinks a little more medium bodied than the ABV would suggest. Big slick chocolate malts, smoothed and and sweetened even more by the cocoa nibs. The cayenne is pretty mild, but lingers in the aftertaste. The orange is there, adding an awkward sweet tone. Not bad, but certainly not that impressive of an offering.

Bottle. Pours black with a grayish brown head that dissipates to the edges. Aroma has a strong citrus note supported by dark grains, light chocolate and a hint of spice. Flavor has lots of dark grains, chocolate and roasted malts with growing citrus and a hint of heat.

12 ounce bottle into tulip glass, bottled on 1/7/2016. Pours pitch black color with a 1-2 finger dense khaki head with good retention, that reduces to a nice cap that lingers. Nice spotty soapy lacing clings around the glass. Aromas of big dark chocolate, cocoa, coffee, orange, cayenne pepper, toasted dark bread, smoke, light char, and roasted/smokey earthiness. Damn nice aromas with great balance and complexity of roast/bready malt and orange/cayenne pepper notes; with great strength. Taste of big dark chocolate, cocoa, coffee, orange, cayenne pepper, toasted dark bread, smoke, light char, and roast/smokey earthiness. Moderate roast/char bitterness, and light fruit tartness/pepper spiciness on the finish; with lingering notes of dark chocolate, cocoa, coffee, orange, cayenne pepper, toasted dark bread, smoke, light char, and roast/smokey earthiness on the finish for a while. Damn nice complexity, robustness, and balance of roast/bready malt and orange/cayenne pepper flavors; with a great roasted bitter/sweet balance and zero cloying flavors after the finish. Light dryness from roasted bitterness as well. Medium carbonation and body; with a very smooth, moderately creamy/bready, and lightly sticky/chalky balanced mouthfeel that is nice. Very light pepper heat; with minimal alcohol warmth after the finish. Overall this is a damn nice spiced American stout style! All around great complexity, robustness, and balance of roast/bready malt and orange/cayenne pepper flavors; and very smooth and easy to drink. The spice flavors weren’t overdone, and let the base stout be the main focus on the flavor profile. A very enjoyable offering.
