Yves Benoit created the Brewmaster’s Selection Wild Funky Wit: a refreshing witbeer. Instead of using yeast for the first fermentation, we use the wild microflora derived from our oak foeders. Due to the complexity of these flora, the beer requires a longer and intense fermentation. The result: the ultimate refreshment with a citrus-sour flavor and taste!

Thanks to Kraddel / Beerlover_Ben. Sampled draft. Hazy citrus golden, massive white head. Nose is basic wit beer soap, candy & soap wit. Taste is bland basic overly soapy, bubble-gum wheat, sweet candy wheat, dough. Basic sweet mainstream big soap wit bee, I assume that Wittekerke which I must admit to never having had was that one, anyway maybe too young? Wild bacteria are sadly lacking maybe it needs more age in order for them to become more prominent?

Bottle at kulminator. Pours unclear blonde, decent white head fades rather fast. Smell is sweaty sour, mild in intensity. Taste is bit dry, some wheat. Sweaty sourness, mild intensity overall. Very nice, doughy aftertaste. Bit weak. Ok in taste, overall, but a unpleasant aroma and uninteresting intensity.

Oh dear I got tricked again, didn’t notice the wild word. A wild/sour, my bad. This one look like a wit. Nice big white head, expansive, creamy, bright, pale milky yellow color. Aroma is sulphuric with wheat yeast and vinegar, lemonade, bicarbonate/soda/magnesium. Heavily carbonated. Finish saves the day with a good dose of malts, sort of radler effect. Decent but really not my thing.
