Our subtle take on the classic style. The Yeast Bay’s Wallonian Farmhouse yeast strain really is the star here, imparting a mild funk which compliments this dry and refreshing saison. On the nose, a hint of orange, hay and a lingering funk. On the tongue expect an initial light bitterness to give way to a light & spritzy, almost lemon flavour and a long dry finish whilst still retaining that funky barnyard characteristic.

Can at home, 04/05/19. Almost clear golden orange with a decent off white covering. Nose is grassy, yeast esters, floral notes, hint of caramel, stale bread, light spice, nana chews. Taste comprises lemon tinged straw, light herb, toasted grains, bitter sweet notes, hay bale, light funk, yeast esters. Medium bodied, fine carbonation, crisp drying close. Decent enough saison but finished a touch sweet …. dropped from a 3.5 to 3.4.

On keg at Brewdog Lothian Rd, Edinburgh. Appearance - golden with decent lacing. Nose - candied orange. Light biscuit. Taste - more of the orange. Some white pepper or even nutmeg. Palate - tangy and light to medium bodied. Dry, tangy finish. Overall - better representation of the style on the taste than the nose.

Bottle 0.33l. Cloudy, gold colored. AROMA- honey, flowery, light lemon tones, spicy. FLAVOR- a bit sweet, slightly bitter, malty, honey, flowery, wheat, touch of alcohol. Medium bodied.

330ml bottle from beersiveknown. Pours hazy yellow, nice white head. Aroma is soft, yeasty, sweet. Taste continues in a similar fashion with a soft fuzzy medium bodied saison character. Some additional lemon zest. Wouldn’t have boxed it in as a Biere de Garde myself.

Bottle from Martins. Cloudy lemon with a thin white head. Aroma of dough. Flavour is doughy malt, a little citrus and a coating of spice on the lips.
