限定醸造シリーズ第61弾 (405バッチ目):このセゾンは私たちのセゾン造りにおいて大きな一歩と言えます。「一退二進」のリリースで述べたように、このビールは私たちが醸造所を立ち上げる当初から目指すスタイルであり、常に解を模索してきました。今回のこのビールは、私たちを深淵へと誘いました。

ベルギーのワロン地方の農場でつつましく造られていたこのセゾンというビールは、他のスタイルと比べてかなり多様性があります。それはきっとあらゆる農産物を自由に使って醸していたからです。最近のセゾンに関しては、スパイシー、酸っぱい、軽い、ホッピー、ハイアルコール、実に様々で、私たちも牡蠣を使ったセゾンを造ったことがありました。大まかな色や風味というものは決まってはいるのですが、今回仕込んだこのビールではまた別の、ダークな一面を見せることにしました。

二種類の穀皮を取り除いたダークモルトを使用することによって、焙煎の渋みを与えることなく色味を調整しました。ミュニックモルトとライモルトで豊かなコクとスパイシーな風味を与え、一退二進であったようなセゾン酵母の柑橘の部分を強調しています。伝統的なセゾンとは打って変わって、ロースト香や蜂蜜のようなほのかな香りに、しっかりとしたベリーの香りが残ります。セゾンのダークな一面も、ユニークで面白いこと間違いなしです!

名前の由来:「七転び八起き」ということわざを皆さん一度は耳にしたことがあると思います。

このことわざは“何度失敗しても、あきらめずに立ち上がる“ことのたとえとしてよく使われ、今回のビールはまさにそのたとえの通り!

ダークな色合いの中にモルトの豊かなコクとスパイシーな風味とセゾン酵母が織りなす香り高いビールになるまでこれまで試行錯誤を繰り返し、諦めず何度も挑戦した結果
香り高く、味わい深いダークセゾンに仕上がりました。

The 61st beer release in our "Limited Edition" series (our 405th batch): This beer adds another page in the story of Saison at Kyoto Brewing. As we mentioned with the recent release of 'One Step Back', this style was a large part of the inspiration to start our brewery and we have always strived to explore its boundaries. This release took us to it’s deep and dark corners, both literally and figuratively.

Since its humble beginnings on the farms of the Wallonia region of Belgium, this style has grown to encompass more variety than nearly any other in the brewing world. Perhaps it is the fact that Saison’s roots lie in production on farms, thereby meaning that the brewer utilized a wider variety of ingredients due to what were on hand, but a look at today’s Saison sees every angle of the flavour spectrum: spiced, sour, light, hoppy, boozy—we even brewed one with oysters. While most interpretations of the style revolve around the colour and flavour profiles of the original, with this beer we decided to go to its dark side.

This beer utilises two varieties of dehusked dark malt, which allows color manipulation without imparting a roasty bitterness. Munich and Rye malt were used to lend a richer body and fuller yet spicier flavour to the beer, which perfectly accents the citrusy component of the new Saison yeast we debuted with 'One Step Back'. The result is far from traditional, with heavy berry notes resting on hints of roast and honey. We think you will agree that this interpretation of Saison’s dark side is a unique brew to say the least!

Naming: There is a saying in Japanese that literally translates as, “fall down seven times, stand up eight”. It’s an expression to describe an activity that one returns to after previously failing at it.

This beer definitely captures that spirit as there were times during the production where we thought this product might not see the light of day.

Despite its bumpy road, the end result is a dark Saison with great aroma and complex taste.

Kyoto Brewing 8th Time Lucky Dark Saison Deep charcoal brown with a tan head and roasty aroma. Medium to light bodied with a rich roasty chocolate flavor. I kind of get a robust porter vibe from it more than saison (though the finish is very dry like a saison). Good stuff

Tap at Komachi. Nose is chocolate, orange, spicy Belgian yeast. Dark brown with some haze and ornage tints and a low head. Spicy Belgian chocolate flavor, cereal grains, not so much citrus. Crisp and light. Rich flavor.
