He is a ruler, an overlord, a top dog, a crowned head. In the richly varied domain of prokaryotic microorganisms, Jelly King reigns supreme.

Rather than choosing between sour or hoppy, we decided to create a beer that would be both at the same time. Showcasing the aromatic benefits of a generous dry hop (Citra, Amarillo, and Cascade), harnessing the pleasing acidity of lactic acid producing bacteria (we use a 5-strain house blend), and coming to a bottle near you without a pesky 2 year slumber in oak, Jelly King is the fermented embodiment of having your cake and eating it too.

What it smells like, what it tastes like: Aromas of ripe berry, balanced tart, jammy flavours, and a hint of subtle plum on the finish. Light bodied, berry-influenced, and crushable.

On tap at Mekong. Pours a cloudy purple with small off white head that lasts. The aroma is raspberry and cherry skin. Slick body, jammy berry, sweet cherry, plum skin, light tartness, very good.

Bottle sample at a tasting at Max's place. Thanks zvikar. Hazy orange-amber. Raspberries, some cherries, lacto, tart, juicy. Really good and refreshing.

(On tap @ the Ossington brewpub, Sept 24/19) Pours hazy pink-red with a pinkish head and some lace. Notes of moderate raspberries with some clear sweetish cherry presence and light acidic sweet-tart plum, some grippier plum and cherry skin, tangy lemony lactic core, with some sweetness from the fruit the balance is moderate tart, finish is drying with some grapefruity hop vibes kicking in and lingering berry fruitiness. Light to medium bodied with fairly soft carbonation. A solid if not mind-blowing JK variant, especially compared to some of the other ones containing raspberry.

Draft @ C'est What?, Toronto. Pours a hazy pale red color with a small white head. Has a fruity sour cherry raspberry aroma. Fruity sour raspberry cherry flavor with hints of plum. Has a fruity sour raspberry cherry finish.

Bouteille 500ml, gracieuseté de msjpearson, Thanks Mike! Couleur rouge framboise mûre trouble, mousse rosée évanescente. Arôme de cerise, framboise très mûre, côté rappelant vaguement un lambic aux framboises. Goût de framboise, acidité moyenne, prune, cerise, amertume moyenne-faible, peau de prune, même côté lambic aux framboises qu'au nez. Carbonatation moyenne-élevée, corps moyen.

Sampled at Snallygaster 2019. Poured a hazy red color with a small white head. Pleasant cherry skins, raspberry, with some light plum. Flavor was pleasant stuff.

On tap at Bar Hop Brewco, pours a cloudy, dark rusted red with a small white head. Aroma brings out a pleasant mix of plum and berries, with plenty of lacto. Flavour is fairly relaxed for a Jelly King variant, with the plums upfront, accentuated by a sort of berry doughnut character and some lacto. Bright and easy, but not a top tier Jelly King. Good stuff, as always.

Murky red pour with decent head and lacing. Plum, cherry, raspberry is big. Decent stuff. Tangy finish. Tap at Snally.
