Together with Stillwater Artisanal we made a beer inspired by everyone’s favorite candy. We made a chocolate bar in a bottle. Then, we aged that beer in Speyside whisky barrels. Absolutely divine!
Sometimes beers happen from coincidence, or in this case coincidences. In October of 2016 we we’re up in Aberdeen to brew with Fierce Beer. Thanks to that visit we got in touch with a company that sells really freshly emptied whisky barrels. We ordered 10 Speyside barrels, almost on a whim. Had no real plans on what to put in them once they arrived. Then, in April of 2017, we had Brian Strumke of Stillwater Artisanal here at the brewery, together brewing what turned out to be our seventh (!) collaboration, Cocoa Cacao - an imperial chocolate stout. Just days before that beer was done the Speyside barrels arrived, and there we had it. Honestly, what better beer to pour in Speyside whisky barrels then a decadent imperial chocolate stout? Coincidental yet perfectly logical. Like life…. kinda.

Instant regret, sorrow, despair. Why did I open this by myself. It's fucking amazing, I didn't expect this to be so good. The nose... It's hard to place... Coconut chocolate cookies? The flavor, even more awesome. It's a pastry but not obscenely sweet.

Lots of vanilla and cacao. Big desert vibe. Lighter sense of roast. Caramel. Pours black with good head and lacing. Very sweet. Tap at Dominion.

(330ml bottle from Systembolaget) Pours black with a tiny short lived tan head and no lace. Aroma of chocolate caramel candy bar, vanilla, soft coconut, soft whisky, base beer is still dominant. Flavour of toffee malt with moderate roast, lots of confectionery chocolate, butterscotch, coconut, soft vanilla, whisky, some wet wood, spirit heat, low bitterness, just a hint of smokiness like you'd expect from Speyside. Quite sweet on the whole though with a little more balance in the finish from the barrel than in the OG version. Medium bodied, feels a bit thin though maybe similar to the OG, with soft carb. Good, the whisky barrel character is not overbearing but beneficial. Still feels a bit 'pastry', especially on the nose. Accomplished pastry, at least.

Pours black with brown edges. Small head. Strong choclate aroma with notes of toffee and whisky. Thick mouthfeel. Tatse is chocolate, salty licorice and raisins leading to a dry, peaty, warming whisky finish.

Flaska från SB. Svart med en nätt liten brunbeige krona. Maffig doft med massor av choklad, toffee, whisky, lakritskola, whiskypralin, lite rågsyrliga toner och mörka bär, vingummi och svarta vinbär. En stor och rund kropp, nästan slät. Smaken inleds med kola, mörka bär och vingummi. Går sedan över i stora toner av Speyside, choklad, saltlakrits, krämig lakritsfudge och lite saltkaramell. Mörka bär, värmande alkohol och chokladpudding. Maffig!

Tap@Beavertown Extravaganza 2017, London - pours dark brown with a tan head. Roasted and sweet malty with opulent rich chocolate, some sweet caramel, fudge, full body and mouthful, vanilla and whisky accents coalesce into the finish.

330 ml bottle. Poursca very dark brown with no head. Aromas of chocolate nougat candy, vanilla and dark sugars plus slick roasted malts. Incredibly rich and sweet flavours of syrupy dark chocolate, nougat, graham crackers, marshmallows, vanilla, chocolate liqueur, sweet mocha, and oily roasted malt. Sound really sweet but not overly. Whiskey is not really noticeable but likely cutting something sweet and sticky. Heaven. A rare 10.

Tap at Bishops Arms Östersund. This beer is no doubt delicious to those who love this style. There is so much character here: deep chocolate, caramel, coconut, then there is that sheer strength with the whisky infused into it all. I find the whisky side of it a little bit sour.
