The concept of Wabi Sabi is is hard to define. It is natural simplicity - flawed beauty - the way imperfection can make an object more compelling. Sourness produced by lactic bacteria in beer is normally considered a flaw. This beer is naturally soured and its sharp tart character complimented with Honeydew melon and the juice and rind of fresh Yuzu. Nothing is perfect - but sometimes inperfection can be beautiful.

Tap at beavertown extravaganza. Nose is citrus, nectarines, grapefruit, pineapple, orange. Palate is orange, citrus, orange, apricot. Joghurty finish. Not bad. Yozu!

Keg at beaverfest. Pours golden, nose is grass, veg, toffee, spices, taste is spicy, tart, funky, a weet.

650ml bottle. Aroma is yuzu, grapefruit, lemon and some sweet melon. Taste is also some of that delicious honeydew, plenty of grapefruit too. Really very tart. Little one dimensional. Just tart citrus and not much else going on. Nice though. Rerate: beautiful sweet fruit and honey over a big tart citric base. Bumped up a few points.

Hazy light tan. Aroma is toasty lactic with peachy-apricotty hop. Mellow tartness, light toastiness, fairly full body but kind of an underdeveloped sour.

Tap at Bitter Phew. Cloudy yellow, low head. Tart, citric Maggi nose, lime, light clay. Slightly mealy aftertaste. Lemon, ginger retronasal. Medium light body, slightly flat mouthfeel. Interesting.

Sample at SBWF 2015. Hazy amber with a white head. Not that sour with lemon, bread, some grass and fruit. Medium body and with a low bitterness. An ok one.

Pours amber with a fading head.Nose shows funky notes, soft citrus and some slightly savoury notes alongside a little bit of melon.Slightly sour flavours, more savoury notes, a hit of honeydew and a little booze.
