The concept of Wabi Sabi is is hard to define. It is natural simplicity - flawed beauty - the way imperfection can make an object more compelling. Sourness produced by lactic bacteria in beer is normally considered a flaw. This beer is naturally soured and its sharp tart character complimented with Honeydew melon and the juice and rind of fresh Yuzu. Nothing is perfect - but sometimes inperfection can be beautiful.

Keg at the Beavertown Extravaganza, day one, 08/09/17. A clear pale yellow with a fine white head. Aroma isspicy berries, dried lemon rind, some peppercorn, Flavour is composed of gooseberry, lemon rind, tart berries fruits. Palate is crisp and tart, highish carbonation.. Lingering musty funk.

Beaverfest. Day 1. Keg. Almost clear gold beer, no head. Palate is light and dry and has a fine minerally crispness. Light lime and lemony sourness. Touch of wasabi. A little sweetness before the light crisp finish. Amusing.

Keg at the Beavertown Extravaganza, Day Juan, 08/09/17. Clear golden pour with not a lot in the way of a head. Nose is pissy lemon, spice, damp hay, citric juice, wood must. Taste comprises mustard seed, grains, damp straw, light yuzu blast, peppery spice, lemon rind, barnyard notes. Medium bodied, fine carbonation, drying close with a sharp losing tang. So so for the style ... doesn't quite pull together.

Tap@Beavertown Extravaganza 2017, London - yellow hazy pour with white head. Citric citrus fruity with some prominent notes of yuzu, floral and herbal nuances going on, light to medium body, tart fruity close.

Draft @ Beavertown Extravaganza'17. Dorée claire, pas de col. Arôme de citron vert, note claire de yuzu, petite touche aigre en rétro avec effet de sour kettle/mash.. Palais est aigrelet assez prononcé et relevé par l'ajout de note citrique citronné. Palais est sec persistant ponctué par l'effet de yuzu. Le tout est léger mais un peu monodimensionnel, râpeux et grinçant aux dents.

Tap. Rather clear golden color with white head. Aroma is herbal, peach, grapefruit pith. Taste is the same. A bit watery mouthfeel, but nicely dry. Medium carbonation.
