Clear, light amber with good carbonation but no head, since it’s cider, of course.
Autolysis, bread, spongecake and vanilla give a very interesting and different nose than one usually gets from a regular cider. At 8.5%, they’ve obviously done some work to get this thing that high and the yeast definitely shows through with light sulfur and other funky-poopy notes. Doesn’t seem overworked or sharp/estery, thankfully.
Light with sprtizy carbonation that keeps it lighthearted and lively with a high attenuation/dryness and a good brace of acidity. I like the carbonation, even if it is force carbed, here. Very yeasty, funky and tannic with light blandness and butter character on the finish. Perhaps a bit too yeast-driven and maybe they could mix in some younger apples to brighten things, but this is still very tasty.

5.2 Gallon Keg thanks to Eden. I have been drinking from this keg for months without taking any notes. Sorry team. It’s important to keep in mind that the kegs are not bottle conditioned that’s why these are a separate entry. force-carbed yields a much different experience. Brewer’s intent wins this time. Excellent effervescent carbonation, golden orange appearance with quickly fading head. a very mineral sour apple aroma with a flavor or peach, cherry, cranberry. delicious cider overall.

Draft sample, thanks Adam. Shows a sparkling pale golden with a small fizzy gwhite head that quickly dissipates in the glass. Smell is fruity with tart apples, star fruit, minerals and pear notes. Mouthfeel is sparkling, dry, lightly tart and light bodied. Nice.
