Bottle, with a bit more than a year of age on it, drunk 7/8/17.
Bright golden body with brassy and maize hues, good clarity (touch of chill haze) and a white head atop that slowly recedes to a ring.
Pear, apple, black pepper and soft oak in the nose play off of both fruity and peppery characteristics, both very welcome in a saison, balancing each other nicely. Honey-like malts in the background are supportive but don’t seem too forward. Very low on the bacterial/wild yeast nuances with just gentle, fruity Brett being expressed and plentiful apple, pear and pepper from the Sacch. Oak isn’t overdone and there’s no toasted character, obviously.
Zesty, bright, peppery phenols mix with lively fruity esters and bright Brett acids as soft oak adds both tannin to the body and light suggestions of wood and vanilla to the beer. Low on the hops and no unwanted American-like saison qualities. Lingering bitterness from the hops replete with peppery phenols balance the beer perfectly and rich, but well-attenuated honey-like malt notes keep things soft. Tight carbonation keeps the drinkability high and really accentuates the pepper and hop bitterness. No alcohol or flaw. Excellent stuff; it’s about time I finally try this brewery.

22 oz bottle shared by AdamChandler, about a year old. Crystal clear gold color. Aroma is light oak, straw, mild rustic grain. Flavor is an exact copy. Very nice mouthfeel, oak is a great character. Wonderful oak brew, nice job Rik Marley!!
