Belgian Style Witbier
Hazy, light and golden, this ale is comprised of nearly 50% wheat. German and American hops lay down a foundation where subtle spicing and malt combine to yield a refreshing, flavorful, and aromatic beer. This beer has a medium, silky mouth-feel.

Draft at the source. Aroma is nice light citrus hops, medium body, medium carbonation, and mild notes of yeast. Taste is citrus orange, some herbal notes and nice light lingering bitterness. I would say slightly out of the normal for the style with all hops but it works pretty well. More hop induced rather than yeast and spice taking over.

Draught at the brewery, early March 2015
Lovely pour shows a mountainous white head topping a lightly to moderately hazy soft, lemon pie colored body. Head is well retained.
A very harmonious blend of light grains of paradise, bits of lemon and soft, fruity yeast in the nose makes for a rather traditional wit while perhaps a touch of light citrus from the hops shows through but seems to focus more on floral and grassy aromatics. Bits of honey and white dough comprise the malt with a nuttiness/creaminess from the wheat. Medium to medium high strength of aroma, no flaws or alcohol.
Moderately sweet malt flavors of honeycomb and undercooked pastry dough are fairly quickly balanced by a light bitter grassiness that in turn gives way to a dry, almost nutty/bready wheat finish with light white pepper astringency also contributing to balance. Hop bitterness works well here against the bigger-than-average-for-a-wit body. It’s not quite Double white, as it’s still incredibly drinkable thanks to, once again, the wonderful carbonation and texture that all their beers exhibit. A touch of doughiness/syrupiness (aka worty) was really my only complaint here. Otherwise, really good beer, which seems to be a theme at this gem of a brewery. Wasn’t quite as in love with their higher abv beers (had the baltic porter and an ~8% BSA) but the mid to low grav stuff was just phenomenal and I’m anxious to come back. Especially since they didnt have any saisons on tap when I was there.

Very cloudy bright orange 2 finger white head, sticky lacing. The nose is hart to pinpoint. Obviously a wheat aroma, slight bananan. The banana really comes out in the taste, hearty wheat body, lovely tropical fruit Esther. Incredibly clean, minor kiwi and nutty finish.
