Our interpretation of a Belgian style quad, Four Ale is reddish brown in color and has flavors of raisin, candied fruit, and plum. We brew this beer with four malts (Caramel, Munich, Carapils, and 2-row), four sugars (Cane Sugar, Date Sugar, Belgian Dark Rock Candi, and Molasses), four hop varieties (Perle, Hallertau, Tettnang and Czech Saaz) and undergoes four fermentations, using four different yeast strains. The result of this elaborate brewing process is a complexity of flavor, aroma and mouth feel we believe is truly worth savoring.

On tap at the Porter. Pours a dark red with a minimal head. The aroma is pleasant and complex. Notes of bread, cherries, nuts, dates and caramel. The flavor is a mixture of typical quadrupel nutty sweetness and a sour citrus flavor more akin to a witbier. It has a very light body for a quadrupel and finishes very smoothly. A strange and delicious beer.

On tap at Allagash tasting at Stags Head. Pours an amber brown. taste is slightly syrupy and of candy sugar, roasted malt, figs, caramel, some yeast with a slight alcohol burn. pretty good

Faint aroma of candi sugar and overripe apple. Murky copper,thick yellow head, minimal lacing. Metallic and relatively non descript flavor. There is a tartness, reminiscent of persimmon in quality but not in intensity. Woody finish. Very little flavor at fridge temperature, but at room temperature, subtle apple and cinnamon notes do appear. Full bodied with alcohol present, but somewhatt in the background. Suprisingly lackluster for the style, with little flavor. I can think of hundreds of beers better than this that are much more affordable. I’ll have to check my ratings, but this may be the tamest quad I’ve ever had.

Hazy to unclear amber with a medium beige head. Sweet aroma with roasted malt, caramel, dark overripe fruits, yeast and a few signs of alcohol. Flavor had roasted malt, overripe plums, figs, dates, caramel, yeast and hops. Finished sweet and full. Towards the end I had warming alcohol to finish the experience.

Bottled at Monk’s Café Wallingatan, Stockholm. Lightly hazy copper colour, small head. Vinous and highly caramelly. Sweet and full bodied with clean, dense, rounded mouthfeel. Warming, brady and toffeeish with notes of cherry brandy and white pepper. Gets a bit syrupy and thick. The sweetness is more evident here than in most Belgian examples, making it less attractive.

Bottle. Pours a slightly hazy deep amber color with a small off-white head. Has a malty caramel and floral hoppy aroma with hints of candi sugar. Sweetish malty caramel flavor with hints of hops and yeast. Has a sweetish malty yeasty finish with hints of hops in the aftertaste and also some alcoholic hints.

Draft at Birreria Paradiso. Thick brown-amber color. Mellow CO2, big flavor. Super malt depth, some pungent raisin and fig. Slight alcohol warmth won’t go unnoticed. A little lacking in effervescence compared to the bottle, which I remember enjoying much more. Rating only reflects the draft version sampled.

Out of the bottle. Deep red with gold tinges and an amazing big lacy head, slightly hazy. Malts jump out of the glass with loads of biscuit and bread. The alcohol rears its head on the nose. Full mouthfeel that balances well with the taste. Great well balanced taste with biscuit, candied sugar and a surprisingly dry finish.

Golden color with a tiny white head that disappears rapidly to leave scant bubbles and great lacing. Aroma of freshly rising bread dough. Flavor begins with orange peel and coriander, progresses to a nice sourness and finishing with a bitter tone. Great body, almost chewy. A wonderful brew, especially on cask.

6th July 2008. Smooth malty beer - no bitterness at all. Very dry aromatic finish. Not a bad Belgian style beer but otherwise unremarkable.
