Every September the hedgerows surrounding the brewery burst with wild hops & a variety of wild fruits and berries. This year we took 4 barrels of sour saison and aged them separately on different fruits to be blended before packaging. First with plums, then damsons, then elderberries and the final barrel with wild hops. They were then blended together before bottling to create a rosy pink deliciously tart sour saison with a sharp fruitiness, rounded off by the earthy tones of the wild hops!

Spritziger, stark säuerlicher Beginn mit ledrigen Hintergrundnoten. Holunder, rote Beeren, Brett. Adstringend, ansteigende Säure, intensiv. Holzig, kratzig, langer Nachgeschmack, erneut Holunder. Komplex! 9/14/10/12/12/12

330ml bottle from Chez Sophie. Pours a ribena purple, no head to speak of. Aroma of moderately sweet, sugary red berries. Taste presents a nice gentle sourness thats underpinned by a soft vinegary tang, pleasant red berry fruit, hedgerow berries, tart damsun, a touch earthy and woody.. lacks a distinct clarity of flavour, though the natural berry fruitiness carries through.
