Im Zuge des Workshops "Käse und Bier" vom Verband der Biersommeliers und den Käsesommeliers durfte ich dieses Bier verkosten. Optisch dunkelbraun und trüb. Durch den hohen Alkoholgehalt fällt die Schaumkrone sofort in sich zusammen - was aber kein Qualitätskriterium darstellt. In der Nase vernimmt man sofort sehr kräftige Aromen von Schokolade, Vanille, Rum, Sherry, Portwein, Kokos und fruchtiger Likörnote, die an Mon Cheri erinnert. Der Antrunk kommt ebenfalls sehr intensiv, fruchtig, schokoladig und deutlich alkoholisch mit einem hohem Grad an Säure. Der Körper wirkt deutlich weniger voll als erwartet, bringt sehr wenig Rezenz, eine relativ wässerige Textur und einen relativ hohen Säuregrad mit. Geschmack und Aroma sind prinzipiell sehr komplex mit Noten von Schokolade, Vanille, Kokos, Rum, Sherry, Portwein, wirken durch die kräftige Säure aber relativ unreif und unrund. Auch die alkoholische Note wirkt dabei verhältnismäßig intensiv und unpassend. Im Nachtrunk kommt die Säure nicht mehr so sehr zur Geltung und die komplexe Aromenvielfalt wirkt gut und lange nach. Mein Fazit: Ich hätte mir deutlich mehr Cremigkeit und Sämigkeit in diesem Bier erwartet und gewünscht. So könnte man sowohl die Säure, als auch den alkoholischen Part etwas maskieren. Andererseits sollte man diesem Bier auch um einiges mehr Zeit zum Reifen geben - dann können sich Säure und Alkohol gut abrunden und für deutlich mehr Harmonie in diesem Bier sorgen. Also ein Bier mit Potential - aber es dauert noch einige Jahre, bis es dort ist wo es sein soll.

Dark mahogany color a With floating things and a small white head. Dried fruits, vanilla, wodden and a acidic to balsamico touch.

Bottle at BBT. Malty aroma and taste, caramel, alcohol, light nougat notes, bourbon wooden notes, medium bitter. Medium to full body, malty caramely bitter sweet finish. Ok.

Bottle shared at BBT 2/2023. Aroma is very rich, intense, complex. Then the flavour fails. The body is rather thin, carbonation also low. Med-high warming alcohol, slightly bothersome. Medium caramelly toffeeish sweetness, balanced by the booze. Moderate wood and bourbon, coconut, vanilla. My biggest problem here is, the beer feels empty in the mouth, also the complexity in flavour is less than aroma suggests. It is centered on the barrel with some supporting nougat. And booze too strong. Not bad, but not great either.

Shared bottle at BBT 1/2023. Dark brown color with minimal beige head. Aroma of dark malt, bourbon, coffee, coconut, wood, alcohol. Taste is alcohol, too much alcohol, nougat, milk chocolate, wood, vanilla, bourbon. Nice.

Dark Brown color with low beige head. Aroma: Dark chocolate, nougat,molasses, pralines. Taste: caramel, abv, pralines, nougat, cinnamon, nutty-hazelnut. Full bodied, low carbonation, low bitterness.

30-12-2020 // 250ml bottle via Bierwichteln. Pours hazy (with sediment) dark brown with a red touch. Nose of bourbon and soaked wood. Aroma of darker malts, dark red fruits, plum. Bourbon notes well embedded.

25cl bottle. Intense woody bourbon nose. The beer starts fruity with woody sourish parts. The bourbon is nice in the back. Easy to drink with nice woody bourbon. Fruity woody in the end. Interesting but not as deep as expected.

0.25 l bottle from 'Bierhandwerk', best before December 2019. Hazy, dark ruby with a off-white bubbles on top of it. Sweetish, malty, gently fruity and slightly boozy aroma of molasses, raisins, candied cherries, vanilla and bourbon. Quite sweet, malty, moderately bitter, gently fruity taste of molasses, raisins, figs, candied cherries, bourbon and some vanilla, followed by a long, moderately bitter, a little woody, quite boozy finish. Medium body, a little astringent and quite effervescent mouthfeel, average carbonation. Quite complex, rather intense but too harsh and rough around the edges to be great.
