Barrel aged Brett saison.
Cuvée Norcini was produced in March 2019 with our friend Armando Romito of Maestri del Sanrio. It is a rustic saison in which we used Romanella, an ancient cereal from Sannio. The beer matured for 5 months in red wine barrels with brettanomyces, before dry hopping with noble hops.

BB 30/08/2022, 330ml bottle purchased at La Cave à Bières d'Etre Gourmet online shop; Brewed with ancient cereal Romanello from Sienna and spelt; barrel aged in red wine barrels for 5 months;
APPEARANCE: light gusher but manageable with minimal loss of the beer; slightly chill haze straw, yellow-ish color, snow white very crackling and quickly dissipating heah in to a tiny ring on the side of the glass; a few small islands in the middle
AROMA: brett forward on the nose but not in a off putting way - musty cellar, dust, funk; moderate sweetness of fruity esters and cereals, sweet grains - spelt and probably Romanello, bread, impressions of ripe sweet white grapes, perfume underneath, diluted lemonade, hints of lychee, sweet apple and stone fruits - dried apricots, subtle wine note on the edges, subtle herbs
TASTE: appropriate carbonation, not too sharp or puckering, light to medium light body, very refreshing mouthfeel, crisp; light cereal and fruity sweetness, bread, soft brett funk on the palate, mild herbal bitterness, hints of dust and hay, minerals, slightly dry finish with lingering cereals, noble hops, subtle white pepper; subtle plastic but not obvious; not much of barrel character on the palate
OVERALL: very crushable with nice cereal character and well behaved brett, lacks on the barrel character, soft bitterness

Pretty clear blond yellow beer, small creamy broken white head, unstable, non adhesive. Aroma: nice and funky, lots of brett, little fruity, tannins. MF: ok carbon, medium body. Taste: fruity, some banana, some citrus, spicy, funky, some apricot. Aftertaste: more fruity notes, sweet, ripe white peaches, soft bitterness, some tannins.

Flaska från Etre Gourmete. Disig mörkt gyllengul vätska med lågt vitt skum. Snygg brettad saison. Lätt, aningen syrlig, krispig. Massor av brett i doft och smak men brett som ger plats för fina nyanser av citrus, rosenvatten, kvitten, blommor. Riktigt gott.

Bottle at home from Malt Attacks, 23rd November 19. Pours orange with a little haze. Aroma is fruity, funk, brett character. Taste is soft floral, light tart, not sour, very soft mouthfeel, brett, rose water, very nice and enjoyable.

Bottle at home. Bit hazy light golden with white head. Huge Brett aroma with sweaty socks and canned pineapple. Some lemon, wheat, flowers, white wine, sweet fruity oak and malts. Under medium sweet, light bitter. Almost medium bodied with low carbonation. Quite alright!

Draft @ Ermitage. Dorée/orange, col blanc-cassé. Arôme au bouquet plaisant, fruité sur abricot, léger côté brett et vin dont effluves de fins raisins - sous-bois et ponctué par un léger grains. Palais est léger, barrique de suite présente, touche de brett - fruité plaisant pour palais sec et rustique. Malt pils, avec une composante de mise en barrique qui apporte un effet léger terreux et fruité avec une sécheresse de ce grains particulier de Romonella. Le brett est assez modéré laissant pas mal de place au caractère complexe de la bière.

33cl bottle from the source. F: medium, white, very quick gone. C: blonde to pale gold, hazy. A: nice sour fruity with bretty touch, peach, woody, basement, bit lemon. T: not so sour as I expected from aroma but could be more puckering, medium body and soft carbonation, nice light sour fruity and bretty touch, bit woody, bit earthy, grapes, peach, good one, enjoyed.
