Dark Hollow blends the miracle of two crafts--brewing and distillation--to create a work greater than the sum of its parts. An Imperial Stout has been aged in charred American oak bourbon barrels still dripping with uncut whiskey. For 100 days the young beer patiently breathes in and out of the wood, gaining complexity, character, and serious attitude. This ale is always bottle conditioned and can be enjoyed immediately upon its release from the brewery...or five years later, when you dust off the last vintage bottle from your cellar to share with good company.…

750ml bottle from Elise, aged for 5 or so years, maybe more. Cork said best by August 2015, drank in April 2020 and it has aged quite well. Really clean by today's pastry standards, the barrel tones are nice, the malts have cleaned up some and are smooth and easy. Sweet bourbon candy caramel in the finish. Tobacco, chocolate, oak. Great.

Corked bottle from dkachur, batch #2, thanks! Almost black and opague. Oak, bourbon and dark chocolate in teh not too abundant aroma. Chocolate, whisky, coffee and raisin in the somewhat alcoholic flavor. Well rounded and well balanced delicious imperial stout.

Big & roasty with soy, charred oak & very light bourbon. Fairly soft mouth despite the heavy roast. Solid!

Bottle shared with pilsnertest. Pours black with a small off-white head. Aroma is pretty bourbon forward with earthy wood, molasses, chocolate and a light roast. Taste is similar with bourbon, oak, vanilla and chocolate. A weak hint of stale cardboard, I might have been holding on to this one just a bit too long. Still highly enjoyable though.

2017 RIS tasting, 2017 vintage on the bottle. Maybe should have held it a little longer. Black, oily pour, head a bit darker than the previous ones. some of the bourbon comes through in the aroma for some boozy scent, nice roast grains, small amount of sweetness. Taste adds some more woody, barrel notes, some chocolate, some fruitiness, which doesn’t seem out of place. A bit of heat form the alcohol too.
