Dark Hollow blends the miracle of two crafts--brewing and distillation--to create a work greater than the sum of its parts. An Imperial Stout has been aged in charred American oak bourbon barrels still dripping with uncut whiskey. For 100 days the young beer patiently breathes in and out of the wood, gaining complexity, character, and serious attitude. This ale is always bottle conditioned and can be enjoyed immediately upon its release from the brewery...or five years later, when you dust off the last vintage bottle from your cellar to share with good company.…

I obtained this 750 ml bottle from Rare Beers several years ago, one of my few remaining big bottles in storage. Label says Enjoy By 06-02-24, I am missing that by a while. Removing the cage, lifting the cork and finally pouring. It arrives like motor oil and is the same color. Very little to speak of in regards to a head, instead there is a small rim of extremely fine silver bubbles. I smell dark chocolate, dark fruit and booze. The taste is decent but not life changing. Semi-sweet chocolate, rye bread, a touch of raisins, roasted malts oak and some whiskey swirling about in the background. The sensation is thinner than the appearance promised. A nice enough brew, I hoped for something leaving a bigger impression. I do lament the decline in availability of imperial stouts these days and to a lesser degree, the disappearance of beer in big bottles.

Bottle from Market Street Wine drunk at the Christmas Tasting. Dark brown, almost no head. Nose is bourbon and a bit of roasted malt. Flavor is very full, a bit of soy and saltiness but not too much. Pretty smooth for a bourbon aged one, decent bitterness to back up the sugars, I like it but not as complex as some other bourbon aged stouts.

Bottle courtesy of Dave, tasted with the München Ratebeer Group Christmas Tasting Friday 2nd December 2022. Pours black peeling away to brown at the edges, with a filmy off white head, soft moutheel, very nice with bourbon and sweeteness, chocolate and caramel. Solid decent beer.

Bottle, huge thanks one51. Murky dark brown body, off-white head. Soft oaky aroma, definitely the bourbon leaving a trace, coconut. Lean, dry taste, light bourbon, char, caramel, indeed, some light vanilla, vague chocolate, ending bitterish. Good profile, ending bitter, lightly astringent.

Bottle. Dark brown color with off-white tiny head. Aroma is charred wood, ash, roasty malts, soy sauce. Taste is the same. Oily mouthfeel, almost flat. Not the best Bourbon Barrel Impstout.
