Bière de Blanc du Bois was brewed with Hill Country well water, barley, wheat, and hops. It was fermented with our unique mixed culture of microorganisms, which includes farmhouse yeasts, naturally occurring wild yeasts harvested from our air and land in the Texas Hill Country, and native souring bacteria. After extended fermentation and maturation in oak barrels, it was refermented with Texas-grown Blanc du Bois grapes. Bière de Blanc du Bois is 6.7% alcohol by volume, 3.2 pH, and has a finishing gravity of 1.004 (1.0 degree Plato). It is unfiltered, unpasteurized, and 100% naturally conditioned. The artwork for Bière de Blanc du Bois was created by our in-house artist Josh Cockrell.

Dark Orange, almost no head. Tart lactic acid, grape skins, pear, kiwi aromas. Well, another way too sour beer..just a personal taste of course but it’s very sour. Sour warhead, jolly rancher (without the fake sweetness), grape skins, lemon juice. mouthfeel is thin. Not a fan. sorry guys.
Now I’m having blend 2 and I loved this. Notes below: changed rating from 2.4 to 4 375ML Bottle, enjoyed just above fridge temp at the QC Tasting. Pour is slightly cloudy but not awful considering how many pours were had before me. a small big bubbly head that formed a thin line. Loads of wine grape aroma with some persimmon, kiwi and grapefruit. Acidity is low, tartness is high though. good mouthfeel with a nice mix of bubbly maltiness almost no bitterness and the tart grape lingers. impressive and I’m pretty amazed I like this one.

Clear pale pinky orange beer, no head. Aroma: very fruity, brett notes, sourish, floral, some honey, bit oxidized. MF: ok carbon, medium body. Taste: sourish, vinegar, white wine, white grapes. Aftertaste: sourish, lemony, bit funky, floral touch, fruity, dry, some tannins.

On tap at Jester King. Pours a hazy gold with medium frothy white head that diminishes quickly. The aroma is strong white grape, oak, light funk. Thin mouthfeel with light tart grape, funk, oak, lingering dryness, very nice.
