Bière de Blanc du Bois was brewed with Hill Country well water, barley, wheat, and hops. It was fermented with our unique mixed culture of microorganisms, which includes farmhouse yeasts, naturally occurring wild yeasts harvested from our air and land in the Texas Hill Country, and native souring bacteria. After extended fermentation and maturation in oak barrels, it was refermented with Texas-grown Blanc du Bois grapes. Bière de Blanc du Bois is 6.7% alcohol by volume, 3.2 pH, and has a finishing gravity of 1.004 (1.0 degree Plato). It is unfiltered, unpasteurized, and 100% naturally conditioned. The artwork for Bière de Blanc du Bois was created by our in-house artist Josh Cockrell.

Pour at State of Origin. Pours a clearish straw color with a finger of foam that dissipates quickly. Muscat forward nose with some vinous oak notes and cobweb, musty hay aromas. Well-balanced, with some dryness and sweetness alongside some medium acidity. Soft on the palate and very drinkable. Another great beer on a hot day. Lingering tartness and white grape.

On tap at Jester King, pours a cloudy dull golden with a small white head. Aroma is loaded with white grape skins, farmhouse yeast and vinous notes. Flavour is very complex, with a wonderful complexity from the white grapes, farmhouse wild yeast and light citric notes. The grapes add an impeccable dimension to this. Excellent.

Thanks James for sharing the bottle! Poured into a snifter showing well filtered golden yellow with no head. The nose shows highly acidic green apple, lemon, with subtle grass and light vanilla notes. The palate is medium bodied and lightly carbonated. Hightly tart with light flavors of lemon, green apple, grass and a finish showing light peaches.

Nose is pale malt, damp straw, funk, pissy citrics. Taste comprises tarte fruit esters, tangy peach, light floral, lemon rind, damp straw, barnyard, grape must.
