Bière de Blanc du Bois was brewed with Hill Country well water, barley, wheat, and hops. It was fermented with our unique mixed culture of microorganisms, which includes farmhouse yeasts, naturally occurring wild yeasts harvested from our air and land in the Texas Hill Country, and native souring bacteria. After extended fermentation and maturation in oak barrels, it was refermented with Texas-grown Blanc du Bois grapes. Bière de Blanc du Bois is 6.7% alcohol by volume, 3.2 pH, and has a finishing gravity of 1.004 (1.0 degree Plato). It is unfiltered, unpasteurized, and 100% naturally conditioned. The artwork for Bière de Blanc du Bois was created by our in-house artist Josh Cockrell.

Bottle at the Rate Beer Awards Festival Hotel Bottle Share. Funky grape nose, acid and grapefruit. Cloudy gold with lace. Sour, good amount of funky, nice fruitiness with grapes and citrus. Decent.

Bottle shared during RBWG - thanks! Pours lightly hazy gold with a slim white head. Tart lemons on the nose, soft funk. Light sweet flavor with continuing lemon tartness, light wheat, hay, cleansing acidity. Light bodied with fine carbonation. Sharp acidic finish with further lemon, light honey, pale bread. Tasty.

Bottle shared at rbwg 2016. Hazed golden yellow coloured pour with a small white head. Aroma is tangy apple, sour, floral. Funk sour. Flavour is composed if sour apple, floral, tangy. Sour and funk, citric acid, palate is sour and crisp. Light acid, tangy. Highish carbonation. Good.

Pale golden colour, white head. Aroma of citrus, light sour, grapes, honey. Sour flavour, citrus, grapes. Finish quite citric, lactic sour, wine notes. Great!

Sexy bottle thanks to rich. Pours out a hazy straw topped with a white head. Nose is nice sour funk tart some fruit and floral notes. Taste is more of the funky tartness some fruit and a nice end.

Bottle sample @ ACBF 2015. De couleur dorée, col blanc0 Arôme donne de suite un léger bouquet suret, acidulé avec un retrait de vin blanc et de raisin, on retrouve ce côté de grappe entière. La barrique et le côté boisé sont aussi là et donne une certaine complexité à l’arôme. Palais est léger, belles notes de barrique et de boisé. Retrouve ce côté brett mais sans être surfait, donnant dès lors ample place pour le profil des raisins blancs. Le tout reste bien pétillant, léger picotement en bouche avec un profil qui pourrait être qualifié de monodimensionnel mais sans en enlever son charme et sa complexité. Retrouve néanmoins un fini portant sur un léger aigrelet. Déjà la version précédente rappelait Foufoune, ici, on se rapproche de Vigneronne ...

No head left, pale yellow-golden beer. Grapes, the fruit itself on top of a very nice Bretty-lambicky background. Old lagered wine, delicate if superconcentrated sweet noble rot. Sweet-sourish grapes and sultanas. Again wild yeasts, if only hinted at. Light to medium bodied, long-lasting flavours. Yet another superb try from JK.

Sampled 500 ml. bottle @ ACBF 2015. Hazy orange, little white head.Nose is sour white grapes, mellow funk, very fruity,… Taste is mellow funky white grapes, huge juicy fruit character, lightly fizzy, very earthly, mineral, lightly salty soil quality, touch boozy funky white wine character,… Higher carbonation. Very impressive to say the least. (Thanks for sharing people!!!)

Bottle shared by Adam! Pours a hazy peachy orange with a white head that starts and remains at the edges. Aroma has a combination of white wine and light funk with a light grain backbone underlying. Flavor has more tart fruit with a decent amount of white wine, earthy grain and light funk.
