White Oak is an equal blend of two beers. A wheat-wine aged in Bourbon barrels (we call it "White Oak Sap") and our Belgian-style Golden Strong Ale (Mischief) join each other in a delicate dance of flavor and character before we package the final product. White Oak showcases vivid caramel, coconut and vanilla flavors blanketed in a crisp yet robust wheat ale. A true exercise of balance.

Bottle: Poured a deep copper color ale with a large foamy head with good retention and some light lacing. Aroma is pretty boozy with distinct notes of bourbon and some sweet caramel malt notes. Taste is a pretty complex mix of light fruity ester with some dominant bourbon notes with some woody notes and light bubblegum notes. Body is pretty full with good carbonation and the alcohol is quite apparent. Interesting exercise with good idea of blending different beers but a bit too strong on the bourbon at the end of the day.

Pours cloudy golden with a white head. Aroma has notes of malt, wheat, sugar, alcohol, coconut, vanilla and apricot. Taste is medium to heavy sweet and medium bitter with a long warm, fruity, yeasty and kind of dry finish. Body is full, texture is oily, carbonation is soft.

Bottle, 75cl, vintage 2012. It’s an unclear, golden beer topped by a small, off-white head. Some alcohol in the aroma, with white sugar, dried fruits, some pale malts, spice hints and some leather. Quite complex flavor, with white sugar, fruityness, some spices, dried fruits, alcohol and bitterness. Full body, warming and pleasantly carbonated. Lasting finish with a nice bitterness. Lasting finish. Although a bit on the sweet side, it’s certainly a wonderful beer. 121102

Sample at Falling Rock Beer Tasting with Dr. Bill on 10/13/2012. The beer pours a slightly cloudy golden color with a medium white head that dissipates steadily. Spotty lacing on the glass. Oaky aroma with some malt and vanilla notes. Full-bodied with an oaky character and flavors of vanilla, citrus and grain. The finish is woody with fruit and yeast left behind. Above average overall.

Thanks Eric for the bottle. Enjoyed in a Goose Island wine-glass at fridge temp.

A - Poured a dark hazy orange with hints plum. 2 finger very effervescent head that fades to a thin line pretty fast. Excellent lacing.

S - A little boozy and full of nice floral characters. Some vanilla as well...maybe caramel.

T - Very interesting taste. very sweet, lots of wheat, caramel and sugar. Very boozy in the middle and at the end lots of alcohol notes like rye whisky. Finish is bready and some spicy cloves.

M - 75% carbonation. Medium body.

O - This is an enjoyable beer. It’s solid and very drinkable. It’s a shame it’s 12% cause I’d like to drink the entire bottle.

Bottle as shown. Pours a cloudy yellow with small white head leaving spotty lacing. The aroma is floral hop and yeast. Medium mouthfeel with a light hop and Vanilla with crisp finish. A good Barleywine from The Bruery.

Draft. Hazy golden color, small white head. Aroma of white wine, citrus, vanilla. Taste is slightly sour vanilla, pineapple. Delicious!

2012. Pours deep gold into a tulip. Bright white head with excellent retention recedes leaving spider lacing to skim surface. Sweet oak and bread aromas. Sharp with sweet caramel and nuts upfront turning to any oak in the lasting roasted nut finish.

Persimmon nose with a light caramel accent. Cloudy amber, thick creamy head, decent lacing. Medium body, alcohol amplified. Persimmon and apple flavor. Bourbon and apple core finish. Light fruits, never roasty. Little hop presence. Bourbon gets exponentially louder upon warming, but is palatable when chilled. Unique and enjoyable.

Bottle. Hazy amber beer with a big cream head. malt and light bourbon aroma. Malt and oak flavor with bourbon and light spice. Medium-plus bodied. Bourbon and oak lingers with light spice.
