This wild ale was brewed in the tradition of Belgian Lambics. The beer was pumped into a coolship where it sat outside overnight, collecting wild bacteria and yeast. The next day they pumped it into four Chaberton white wine barrels, where it matured for 18 months. It was then pulled from barrels and went through a secondary fermentation in the bottle, creating natural carbonation.

Hazy and sort of a dull gold. Thin head. The aroma is full of the white wine barrel, and a fair amount of bugs and florals, too. On the palate, this is full of florals, some nice brett character. I like it.

Cloudy gold with a gusher of a head. What a mess. Lots of funk and some light petrol notes. Tart and it starts soft and grows considerably. Funk and light cheese with a long finish. Getting there.
