The stage before young lambic, still largely unfermented, in old times used for making faro, now for blending purposes as mentioned, though Boon allegedly still uses his own meerts in his faro as well. Not commercialised, tasted at Weekend der Spontane Gisting in 2005. No head, dirty amber-brownish, cloudy; lambic character embryonic since all those complex fermentations still largely have to start up; therefore this product logically has a worty, sweetish taste with a honeyish barley character and sourish wheat character. Hard to rate as explained above, but if you are interested in the ancient and complex lambic culture as one of the most exotic subcultures within the beer world, you have to have tasted this for the sake of experience alone.

Version dégustée chez Tilquin durant les portes ouvertes 2012 et au Toer de Geuze 2013. Dorée, léger trouble avec un col blanc modéré. Le tout venant directement du tonneau. Profil reste très orienté vers le moût voire drêche mais est suivi par un profil modéré de lambic, de boise avec une petite pointe aigre mais dominée par une amertume houblonnée modérée. Palais reste léger avec une tournure favorisant clairement le grains et ce cote céréales. Superbe pour le temps chaud, se laisse boire par verre entier et plus complexe qu’une bière de table.

Tap at Tilquin, during TdG 2013. It pours cloudy golden with a small bubbly white head. The nose is earth, wood, wheat, farmyard and some urine. The taste is smooth wheat, hay, earth, pithy lemon, farmyard and graininess with a dry finish. Light body and soft carbonation. Pretty much no tartness to speak of. Smooth and easy drinking, but nothing particularly special.

Hazy pale yellow colour, no head. Aroma of rain water, butter, wet straw, light citrus, light sour touch. Light sour flavour, citrus, malts, sweet residual sugars. Still a lot of wort character. Quite thin body. Soft citrus finish, light sweet.
It’s not a brilliant beer by itself, but an example of an old style that’s basically extinct. I love to have been able to drink this and taste what land workers would have been drinking back in the days. It has a quite strange character, but is really thirst quenching. Many thanks to Pierre Tilquin for making the style available for tasting.

Draft @ Tilquin during Tour de Geuze 2013. Drank whilst enjoying their BBQ in the tent. As confirmed by Sebletitje via Tilquin & apparently Joris below his goods originate from Boon. Very unique and interesting concoction, quite murky golden with little white head. Huge barnyard, like actually eating wet straw from the fields, barnyard, musty wheat, actually some hops, barnyard bitterness in here, wet wheat, well, worth, musty grains, murky, very unique & a bit hard to take in actually. Fuller grains, wheat etc. body, little in the way of carb. I was quite fascinated by this & it was lovely to drink this outside whilst having a lovely lunch. This is the stuff… objectively this is… so I am going to rate this subjectively for the experience & I quite enjoyed it, not too sure as to how to put a figure on this. All of my ratings are subjective anyway :)

A lower alcohol versions of his regular gueuze, Pierre was seving this one from two different oak barrels during the opening weekend. One was 2 months old and the other was 1 year. The youngster was bright cloudy yellow with a medium large bubble head that settled quickly. Aroma was lemon, taste was sweet. The 1 year had a few bubbles, hazy, an aroma of lemon rind and both lemon and grapefruit in the taste. Very easy drinking.

Draught. HAzy brownish colour, no head. Aroma is very much caramel and also some wooden hints. Flavour is carmael, yeast, earth in a very nice way. I guess I’m a pervert since I liked it very much .)

Draught @ 16th Weekend of Spontaneous Fermentation 2007, Optal. Murky medium orange color with virtyally none head. Aroma is moderate to heavy sweet, hops, malty, dust. Flavor is moderate to heavy sweet (fresh sweet / like young ! ) with a average duration. Body is light to medium, texture is watery, carbonation is soft. Once in a lifetime experience.

Very hazy brown body. Sweet aroma of citrus, hops, malts, with a dusty overlay. Lightly bodied, very sweet flavour with some bitterness. Weird, but not very good. Like drinking wort. Thanks to Frank Boon for providing this beer. It was unique!

Starker Karamellgeruch. Milder Antrunk, ein leichtes Karamellaroma ist präsent. Wässrig-süß, etwas getreidig, eigenartig. Wasserabgang mit leichtem Hopfenaroma, weiterhin gut erkennbar mit Karamellnote. Interessant! Test vom 29.5.2007, Gebinde: Fass Noten: -,9,9,9,-,9 - 9,00
