Made with three varieties of apples, Domaine Lafrance is a complex ice cider made with cryoconcentration.
Cryoconcentration: apples are picked when mature, and then they are frozen before the pressing. After, the juice is frozen outside to extract the concentrate. Finally, this concentrate is placed in a wooden for a six month fermentation.
Domaine Lafrance is sweet, smooth and liquorous, with fresh apple aromas. Taken with an entrée, the dessert plate or a fine old Cheddar. Foie gras, pâtés and terrines, tarte Tatin, apricot mousse and dark chocolate.
One 375 ml bottle of ice cider requires 12 or more kilos of apples, or the equivalent of 60+ apples.
Serve chilled.

375ml (thx, Jonsthan D.!) @ Alex's. The KGB style tasting on Jan 2nd. 11% ABV. Recolte 2018. Appearance: clear pale golden. Aroma: sweet and sour apples, not very heavy. Taste: along the same lines, more sweet than sour, but its acidity lavel is still quite noticeable. Overall: very nice.

Bottle shared at the Martin T tasting, CBC Clerkenwell - London. Cheers! Pours clear gold. Smells gorgeous, lots of super ripe apples, apple sauce. Delicious, very sweet but still balanced. Full bodied, fine, oily. Lightly warming finish, more ripe and gooey apples and apple sauce character. Awesome.

Bottled at Ottawa gathering. Almost clear deep golden, no head. Intense ripe apples aroma. Sweet with full body and rounded mouthfeel. Honey, concentrated ripe apples, raisins. Harmonious and seemless. Warming finish.

Bottle pour, much thanks to mcberko for the share on this. Always love trying these ice ciders. Some of the best tastes in the world. Crystal clear apple juice pour with no head. Sweeter than expected red apple aroma. Like a spiced apple sauce. Flavor is generously sweet and thick. The right kind of sweet. Not overwhelming or candy. Pleasant, with a bold backbone to it. Leaves quite a lasting impression. Purely a magic potion here. Love it.

375mL bottle, pours a hazy golden copper. Aroma brings out treacle tart, caramelized apples, and toffee. Flavour is highly sweet even for an ice cider, with toffee, treacle and caramelized apples. Loads of caramelized apples on the finish. Not the most complex ice cider, but it's certainly decadent and well-made. Excellent.

Bottle, 5 ml. Pours clear golden amber with a few bubbles on the surface. Clear aroma of apples, with notes of fermentation and very mild hints of spice. Sweetish flavour of frozen apples with dry, vinous notes. Oily texture. Vinous and fruity afteraste. Warming alcohol presence. Very nice. Ideal to conclude my tour of Canada with. :-)

Blond colour, sweet and acidic, quite rich, the aroma is deep, the flavour is very good but not excellent or complex; the colour tells enough.
Very good overall.

Light amber color, bright. The aroma is very deep: fruits, sourness, apricots. Thick mouthfeel, very sweet, but also with a high degree of acidity; lot of apple and apricot flavor, without the caramel or stewed fruits, a bit astringent in the final.
Excellent liquor.

Bottle - Sweet cooked green apple. Clear gold. Rich cooked Apple, no sharpness, no acidity and a very rich mouthfeel. Very nice.

Thanks to Ajax and Heather for this 4 oz. bottle. Clear yellow color, no head. Aroma is golden apples, pear juice and sugar. Flavor is very sweet and a direct reflection of the aroma. Syrupy and slick texture. Very sweet but completely fantastic.
