Abbiamo pazientemente aspettato qualche anno, e finalmente è pronta. Ispirati alle Flemish Red e all’Aceto Balsamico Tradizionale, siamo partiti dalla Saba, il tradizionale mosto cotto Emiliano, e l’abbiamo lasciata in botte a sviluppare la sua spiccata acidità acetica. Una birra importante e complessa, per la cui immagine ci siamo affidati all’amico Antonio Bravo che ci ha regalato una sua personale visione del “Vecchio Bruno” in giro per Parma… vogliamo pensare sia la capostipite dello stile Sour Emilian Red Ale.

On tap at King Arthur pub in Ciampino-Italy, with luttonm. Pours dark brown color with red highlights, neverending ivory foamy head. Nose: cherries, wood, leather. Mouth: cherries, a mild sour character in the middle of the drinking phase, peppery and tart finish. A frizzy feeling on the palate as well. I liked it.

At Borefts Beer Festival 2013. Hazy chestnut colour with a tiny, off-white head. Malty aroma with caramel, dried fruit and nutty hints, dark sugars, oak and brett. Dry and slightly tart, funky flavour with oak and tannin, and some dried fruit

Bottle @ 5th Borefts Beer Festival 2013, Brouwerij de Molen, Bodegraven, Netherlands. [ As Toccalmatto Vecchio Bruno Sour Emilian Red Ale BA ].Clear dark brown color with virtually no head. Aroma is moderate to heavy malty, caramel, wood, berry - vinegar, berry, wood - oak, light roasted. Flavour is moderate to heavy sweet and light to moderate acidic with a long duration, vinegar, wood, flat, thin. Body is medium, texture is oily, carbonation is flat flat. [20130927]

From a 0.75l bottle @ Borefts 2013. Not much of a head here, the little that came with the pour is long gone only minutes after. The beer itself has a light cloudy deep brown color, and the nose is as expected infused with wood, barrel, a slight sour hint and dark old ripe berries. Smells quite complex and I'm sure this would deserve a bit more than a quick Borefts rating. It is dead flat in the mouth this and it has a gliding oily mouthfeel. Nice gentle sour and woody flavors here. It's a bit milder the I had imagined. Some subtle traces of vinegar and sour berries. It's somewhat oxidized also in the taste, and it's suiting it quite nice. Red currants and a little bit of brown sugar in the finish and aftertaste. Elegant, but dead flat. 28.09.2013

Bottle pour at Borefts ’13, 28/09/13. Reddish amber with no head. Nose is tarte berry fruit compote, vinous, dank wood, light balsams and acidic qualities. Taste comprises oaky boozey wood, tarte red grapes, soured berry mash, light acidic notes, vinegar. Medium bodied, flat with no carbonation. Decent enough Flemish Red, could have done with a little more carbonation as the lack of caused this one to be pretty lifeless.

Borefts Beer Festival 5. Day 2. Lightly hazy beer, deep red - amber. No head. Smooth palate, no carbonation. Nice mellow wood, well integrated with Sherry and a touch of caramel. Mild dried fruits. Smooth and semi dry finish. Tasty but flat!
