Abbiamo pazientemente aspettato qualche anno, e finalmente è pronta. Ispirati alle Flemish Red e all’Aceto Balsamico Tradizionale, siamo partiti dalla Saba, il tradizionale mosto cotto Emiliano, e l’abbiamo lasciata in botte a sviluppare la sua spiccata acidità acetica. Una birra importante e complessa, per la cui immagine ci siamo affidati all’amico Antonio Bravo che ci ha regalato una sua personale visione del “Vecchio Bruno” in giro per Parma… vogliamo pensare sia la capostipite dello stile Sour Emilian Red Ale.

Thanks Massimo. Aroma has big sourness, Rodenbach like, but more balsamic, but not overpoweringly so. Cheesy, grapes, sharp. Light carbonation, feels very smooth. Nice sourness at the end. Very nice. After the sourness fades the fruit really shines. Lovely.

Bouteille 75cl BB 31.12.2025, lotto# 11079. Cuivre, acajou, col fin beige. Arôme au nez aigrelet enyant de fines effluves balsamiques qui sont un peu trop dominantes et alternant sur cette sensation de vieille brune. Palais est malté avec dès les premières gorges un rappel de oud bruin, ensuite le caractère balsamique vinaigre deviant plus pronounce rendant le tout assez difficile à boire sauf si on apprécie ce genre. Pointe de fruits rouges et noirs, léger acarmele t graisn en retrait. Correcte, mais trop agressif pour moi.

Slightly hazy dark red brown beer, big aery beige head, unstable, dissipates quickly. Aroma: dusty, lots of dried fruits, sourish, vinegar, alcohol, little chemical. MF: ok carbon, medium body. Taste: very acidic, lots of balsamic vinegar, little sweet, caramel. Aftertaste: sourish, very acidic, vinegar. Too sour, too much vinegar, not balanced enough.

Pours dark red, bit of foam, not much of it though. Aroma is really cutting you with acidity, through everything and deep. Somewhat like vinegar, which feels actually nice. Taste is also sour but vinegar balsamic comes trough strongly. I like it a lot. Very cool beer.

Small yellow-cream head over deep reddish-brown beer. Sharp, acetic nose with red fruit and balsamico - but not the best one. Wood and acetic acid returning in the mouth, with fruitacids and ketones or aldehydes. Harsh, sharp, acidthinning. Wààày too sharp.

Chestnut color. Frothy head. Big big sour nose, huge balsamic vinegar nose with oak and cherries. Big lingering oaky and cherry finish. Very nice. Good acidity. Just big balsamic finish.

Thanks to Massimo for sharing (and making) the bottle! Poured into a taster showing translucent copper rust tinges and around the clear rims. The nose shows high acetic vinegar with big notes of oak and dry cherries. The palate is highly acidic, medium to full bodied, and moderately carbonated. Vinegar like flavors on the attack and finish with a mid palate of sweet balsamic vinegar. Light bitterness at the finish and slightly overtart.

Bottle shared at Leighton’s. Many thanks to Paul for this one. Hazed deep amber brown coloured pour with a sticky tan head. Aroma is tangy, sour berries, some acetic, tangy, some nail polish remover. Flavour is composed of semi sweet and sour, woody, vinegar, red berries, wood, lacto. Palate is sweet and sour, highish carbonation. Ok.

Bottle shared in London - many thanks to Paul. Pours unclear amber with a frothy tan head. Smells like rotten fruits, sweat, old beer, berries. Light to medium sweet flavor with with plenty of woody dryness, biting acidity. Medium bodied with fine carbonation. Cleansing finish, pretty dry, a little acetic, dried berries. Tasty.

Bottle shared at Leighton’s. It pours cloudy deep ruby with a medium yellowish-beige head. The nose is soft, juicy, candied cherry, raspberry, jammy action, vinous, lemon sherbet, vanilla, balsamic vinegar and tangfastics. The taste is crisp, tart, good mouth-pucker, jammy berry, raspberry, tart green apple, lactic acid, wood, red grape skin, Vimto and good vinous action with a dry finish. Medium body and moderate, foamy carbonation. Well-rounded, good depth and high drinkability. Rather tasty.
