A Sour Forage Beer brewed with pine needles, wintergreen, and goldenrod. This Saison style is part of the Beers Made by Walking project that encourages brewers to create a beer inspired by the environment local to their brewery. Flying Fish worked with the Pinelands Preservation Alliance and the New Jersey Conservation Foundation to explore New Jersey’s Pinelands National Reserve. The result is a medium bodied beer with a dry, tart herbal flavor. The herbal notes of the foraged pine needles, goldenrod and wintergreen (all found on private land) blend perfectly with the peppery, earthy notes of the Saison.

Big gusher when popped open the bottle. Slightly cloudy hazy golden coloured body with a very thick, five centimetre tall pure white head that leaves a pretty ugly lace on the side of the glass. Aroma of dry grain, light flowers, some subdued herbs and coriander seed with a dash of grass, light low alpha acid hop notes and the slightest bit of a soured, tart bretty and funky yeast note. Medium-bodied; Very floral and super grassy notes dominate with a small malty bite with some biscuits and a little sweetness along with a hint of the tart, funky yeast flavours throughout. Aftertaste shows the dry, very herbal, grassy bites with a dash of flowers, tart fruits and sweetness that is quite complex and pungent throughout. Overall, a very nice and robust, crisp beer with a light bretty and funky yeast element and a complex, soured, tart punch that shows through with a grassy and herbal backbone. Good to sample and interesting throughout. I sampled this 75 cL bottle purchased from from Liqour Outlet in Boonton, New Jersey on 26-November-2016 for US$8,99 sampled at home almost three years later on 20-October-2019.

32oz growler from State Line. Poured into Coney Island glass mug. Hazy golden color. Decent sized head that fades without much lacing. Aroma is lightly fruity, and thick bready maltiness. It tastes like some pineapple was added to this, maybe that is some brett? Aside from that there isn?t anything funky or sour about the aroma. Mouthfeel is a little thicker for what otherwise feels like a small beer. Flavor is lightly tart pineapple with again a thick maltiness. A little dull of a beer, not a sour, low hop... meh. I will drink this 32oz growler and I?m fine with it for the low price I paid but I have no need to drink it again.

750 ml bottle. Pours pale gold with a large frothy white head that dissipates quickly. fragrant fresh yeasty nose with a hint of herbs and pine. First sip yields tart, bready notes. Earthy malt and sharp citrus peel as well. Slight peppery bitterness in middle, like bitter greens and mustard seed. Dry spicy finish accentuated with some sour notes. Very tasty and a good example of the French Saison style. Very hard to find, but worth seeking out.
