This Backwoods Cyser (’size-er’: a honey wine made with apples) was made with Michigan apple cider and a blend of Michigan star thistle, buckwheat and wildflower honeys. Once fermented, we placed the cyser into bourbon barrels and aged it to taste. The finished cyser is full bodied with smooth apple-honey character. Finishes with a touch of caramel, oak and bourbon.

375 mL bottle from Oak Tree Liquors, Plainfield, NJ. Pours a crystal clear golden color. Aroma of honey, toasted wood, bourbon, herbal notes, floral notes and an almost chocolate note. The taste is honey, toasted wood, citrus, apple, whisky, vanilla. Medium bodied, slight legs, low heat. Very nice.

Colour of white wine. No carbonation, no head. Aroma of apples, white wine (sauvignon blanc), light honey, quite floral. Flavour rather sweet, quite alcoholic, sweet apples, light vanilla, some bitterness and astringency following up. Finish is pure floral honey with a massive booze head. My first ever mead, and I quite like it.

375 ml. bottle sampled @ RBWG 2012 – thx to sebletitje – comes in the most incredible purple coloured bottle I have ever seen, quite interested in this one since I have never had a mead before – clear apple juice with no head – very sweet apples & apple juice with alcohol is the smell – taste is very sweet, sweet apples followed by bitter honey and bit too overwhelming booze kick in the finish, in link of oak, low carb & slick, made me think a bit too much of apple juice mixed with honey and too much alcohol, interesting but not quite my thing

Sampled @ RBBWG Antwerpen. Courtesy of Sebletitje. Very pale yellow, no head. Smell fruits, apple, alcohol. Taste sweet, very much warming alcohol in the finish. Soft carbo, medium to full body.

Bottle at the World Beer Festival Columbia Brewers Party on 01/21/2011. Clear golden body with no head. Huge honey and vanilla aroma with some light apple. Bourbon, vanilla, and honey flavor with light apple. Full body with no carbonation.

Bottle. Pours clear gold. Nose/taste of honey, McIntosh apples, oak, vanilla and light bourbon. Medium body. Smooth.

From bottle at Sunset Grill. Pours cleand and golden yellow with no head. Aroma is herbal honey and slight citric apple fruity. Sweet, phenolic and vanilla wooden. Smooth finish.

Encore un hydromel qui s’ajoute a la longue liste des merveilles de chez B.Nektar Dorée couleur jus de pomme. Arôme est vraiment formidable mélangeant le tonneau de bourbon avec la douceur de la pomme caramélisée. Le tout laisse s’échapper des essences de miel / sarrasin qui est suivi de ce côté pelure de pommes et aspect terreux/organique du miel. En bouche, le bourbon est long et donne à cet hydromel une autre dimension alternant à la fois la vanille du tonneau, caramel et une toute fine amertume venant du cidre de pomme. Quant au miel, on peut y noter ce côté fleurs des champs et chardon qui reste bien doux et sucré. Une fois à bonne température, ce mélange de bourbon, vaille, pomme et caramel devient divin.

Bottle thanks to Sarah! Poured a clear pale gold with no head but some carbonation visible. Aroma was sweet with honey and had notes of tart dry apples with a hint of bourbon. Flavor began sweet with honey but quickly transferred to dry tart apples for a quite dry finish. Not much bourbon on the tongue.
