This is obviously a celebratory beer. Its high alcohol content (10 degrees by volume) and the other organoleptic characteristics that distinguish it, such as some unusual ingredients, among which the Champagne yeasts, two types of honey (wildflower and acacia) and some stand out wild fruits, among which the sour cherry and the blackthorn are the prizes. Its foam is affected by the intense alcohol content and is not necessarily persistent any longer than is allowed by its powerful ethyl burden.

75cl bottle at La Brasserie, Rimini, Italy. Pours hazy rose, pearl at first, with minimum foam. Aroma is very evidently given by the wild cherries used, plus the champagne yeasts which are very evidently upon opening the bottle. Body is fairly dense, with moderate carbonation. Good evidence of the alcohol level, but not excessive. Taste is delicately sour, with a little sweetness. Finish is moderately long.

(bottle, 75cl) Hazy, deep amber colour with a short off-white frothy layer. Deep, fruity nose with notes of cherries, redcurrant, backed by nutty and slightly toasted malt and a whiff of caramel. Moderately sweet and mildly bitter flavour, full bodied with a creamy carbonation. Nutty malty base with vinous fruity notes of cherries, redcurrant and raspberries, getting slightly boozey towards the finish. Okay. 04.VI.18

Bottle. Light oxidized fruit and honey nose. Hazy amber, low white head. Dry body, light metallic, clay, peach and cherry, somewhat boozy, light mealy, dry fruit basket finish.

Murky dark pink. Aroma is apple syrup orange zest some spices. Taste is heavy alcohol and syrup sweetness. A bit alcohol and hazelnut at first. Cherry later. Nice.

Bottle, nose is grapes, honey, wood. Palate is woody apple, grapes, honey. Honey finish. Pretty nice

Bottle. Hazy amber color with white head. Aroma is cherries, honey, dough, rather fresh. Taste is honey, fresh yeast, well-balanced tartness from the fruits with the sweetness from the honey, a touch. Silky mouthfeel with fizzy carbonation. Works!

750ml Swing-top bottle serve in bucked with water and ice cubes. Osiagnelo temperature 5 stopni Celsjusza. Spora blyskawicznie rosnaca pianka jak w szampanie ale tak szybko nie opada lecz jest dosc dlugo trwala. Barwa zamglona pomaranczowa z jaso szarymi odcieniami bladego rozu. Aromat miodowo owocowy, owce lesne. Smak to glownie syrop z agawy, klonowy i miod. Owocow w smaku niezbyt mocno sie wyczuwa, wisni nic, a nic moze troszke tej dzikiej sliwki, ale jesli owoce to tylko nasuwaja mi sie do glowy figi, mnostwo figowego dzemu. Piwo mimo owocow malo owocowe, wytrawne i mimo sporych odczuc miodu naprawde nie bylo slodkie. Kapitalnie dobrane i zgrane jest tu wszystko, do tego piekna butelka, alkohol zupelnie jakby go nie bylo. Federico Fellini Still Alive!

Bottled. Orangeish golden colour, mediumsized white fluffy head. Aroma is quite strong on the alcohol, some rhubarb, mild herbs, some grape as well as some mild resiny notes. Flavour is gluelike alcohol, some rhubarb, mild grass as well as some yeast and mild strange sweetness to it.

Bottle shared at CBC Clerkenwell 10/9/2015. Many thanks to Kenny for this one. Translucent yellow / straw coloured pour with a lasting thin white head . Aroma is solvent alcohol, with apple, grape and apricot fruits. Flavour is composed of Belgian yeast, woody, tart apple, apricot and grains. Palate is grainy, spicy and highish carbonation, tangy grape. Not a huge fan of this.

Bottle shared at Craft Beer Co, Clekenwell - London. Many thanks to Kenny. Pours unclear pinkish gold with a foamy white cap. The nose holds doughy pale bread, citrus, herbs. Medium sweet flavour with light alcohol bump, lemon rind, bitter grass, more herbal notes. Medium bodied with fine to average carbonation. Lightly warming on the finish with notes of crusty bread, grains and citrus fruits. Interesting. OK.
