This is our second edition of Today. It is a blend of two year old and one year old spontaneously fermented beer. The wort was produced using the traditional turbid mash method, with a grist of malted barley, raw wheat and rye. It was left in our coolship overnight to be inoculated with wild yeast and bacteria, before being transferred to wood.

0,75l bottle at home. Bottled 02/2019. BB 02/2029. yellow hazy color, medium big white head. smells funky, oak, stone fruits, cheesy, grassy, very nice smell. medium body, soft carbonation. tastes cheesy, citric, funky, earthy, earthy, peppery, minerals, some stone fruits, hay. finishes lightly dry and lightly sour with notes of funk, citric and some minerals. very nice one, reminds me of a good geuze, yet with a dstinct flavor profile. Rather full mouthfeel yet not heavy or cloying. very good one.

I have decided I really like Mills. This one is ranging into lambic / gueuze territories, at least concept wise. Fairly sour, nicely funky and pretty dry. Some good wood in there too. Excellent balance of flavours, and many too.
