An intriguing dark ale that moves to its own beat, our minds set about creating a beer that contradicted itself. Rich, dark and flavoursome but at the same time ever refreshing. Malt driven but with the aromatic lift of generous doses of hops.

With the help of traditional open fermentation tanks we let our Dark Ale yeast play... and it likes to play hard. Yeast normally does its thing in closed tanks that tends constrains it work, but with open tanks (that are just like a big soup tin without the lid), the yeast is allowed to run wild.

Raisin like esters bind a balancing act of flavour with a malt bill that rewards the parched palate and delivers a rich, dark colour.

Passed through a hop back laden with whole hop flowers prior to a liberal dry hopping regime during open fermentation, this is a dark ale with a generous amount of reassuring bitterness.

Bottled, from random bottle shop in Melbourne, Victoria. Clear mahogany volour, small head. Caramel and milk chocolate upfront. Mid sweet with medium body and clean, rounded mouthfeel. Some chocolate,notes of coffee and spice. Mid bitter finish.

Chestnut brown. Thin head. Light and vaguely caramelly nose. Light, sligthly fruity, toffeeish flavour. Light body. Ok brown-ish ale but the word "light" comes up way too much.

Draught as a middy size at Macquarie Hotel, Sydney, on July 16, 2013.Roasted, sweet, malty taste. Roasted, mineral aftertaste. Sort of fizzy high co2 mouthfeel, medium high mineral like bitterness. Clear dark brown color with red hues, light brown head. Sweet, mellow, malty, roasted scent.

330ml bottle. Brown-ruby amber colour, thin tan foam head and aroma of malt, abit roasted, with slight chocolate & biscuit notes. Taste is malty, sweetish, caramel, some fruitiness and lingering bitterness. Smooth mouth feel, light bodied, medium carbonation, bitter finish. OK.

You get some unexpected wafts when you sniff White Rabbit in your glass. There’s plenty of caramel and toffee, but also resin, pine, tobacco and something that i can only describe as Melbourne Water. Almost like I’m sniffing an ice block. The creamy head unfortunately belies a somewhat watery palate dominated by a very light hoppiness and some late chocolate. Unusually for a dark ale, I recommend this beer for a warm summer’s day.

Bottle in Perth, WA. Brown in colour with slight carbonation. Sweetish, with caramel and a touch of spice, before a short, bitter finish. Forgettable.

I dont rate this as highly as others. Initially carbonation was high but settled down after a while. This was a stubby, may be diff on tap. Malty flavour with a mild bitter finish but it just lacks a bit of oomph.

Bottle at home ... dark brown ... thin bubbly tan head ... sweet roast malts ... light fruity toffee ... quite big hop nose ... over fizzy ... little caramel ... little licorice ... big toffee ... nice but theres a little odd something bottle at the bow ... deep brown ... thin off white head ... soft spicy toffee malt nose ...soft toffee malt ... ligt sweet malts ... little too caramel mal... stick 3.4

From 330ml bottle on 14/6/2010.The aroma is spicy, with some fruity hops. Not similar to any brown brown ale I’ve tried to date, it almost has a dash of APA to it, with dark fruit and a distinct hoppy spiciness dominating the malt. A nice effort.
