This is a classic cider. With a wonderful fresh apple juice aroma and effervescence that tickles the nose the cider gives an initial burst of sweet apple flavour on the palate followed by citrus and woody notes derived from the bittersweet and Jonagored apples used as the base ciders. This carbonated cider is best enjoyed as a refreshing thirst quencher, chilled to 7 degrees (watch the ice – whilst it will maintain the chill it can conceal the full flavour!).
This was our first and remains our most popular cider. The medium dry contains approximately 20% cider apples and 80% eating apples. The cider apples provide the astringency in the cider and the structure on which the full, rounder and more citrus characteristics of the eating apples hang themselves. Our apples for this cider are currently drawn from the counties of Laois, Waterford and Tipperary. The eating apples are harvested from late July through to September and the bittersweet apples are available from October onwards.

Bottle at Mum and Dads, 23/09/18. Pale golden blonde with a big old lasting white head. Nose is bitter sweet apple, grass, residual sugars. Taste comprises sweetish apple pulp, icing sugar, straw mellow orchard tones, apple pie. medium bodied, fine carbonation, drying close. Ok cider if a touch on the sweet side for my liking.

Cask Deep-chromate yellow/golden clear cider with a small rim from pouring. Mainly sweet apples and a bit of straw. Quite some sweet applejuice, as if halted fermentation, which would be strange. But tasting natural, no syrupiness. Sticky-slick, no cloying, keeps hanging around backthroat for quite some time. Decent, but not a patch on the Welsh ciders.

Bottle as Finnbarra Medium Dry Irish Craft Cider, medium sample. Clear golden color, short frothy lasting head. Aroma of apple juice, cake, slight spicy. Bit sweet in taste, mashed apples. Decent, but nothing spectacular.

500 ml. bottle sampled as “Finnbarra Medium Dry Irish Craft Cider” @ “Kaapse Brouwers 1st Anniversary Beer Festival”. Pale golden. Sweetish apple nose, light rustic note,… Light touch dry, rather sweet apple, faint candy,… Med. to dry body. Not bad at all but rather forgettable.

500ml bottle @ Beerdock, Crewe as Finnbarra Medium Dry Cider. Pours pale yellow, strong sharp cider character with ripened tannins and robust fruity finish. Delicious.

Draught, smallish quickly dissapearing, head, pale straw yellow colour, aroma of apple and apple skins, flavour of apples with just a spicey touch, quite sweet but with a strong empathic sourness, balancing perfectly. Very good and very easy cider.
